Business Owner

Thoa Nguyen, chef de cuisine and owner of Chinoise Café, has created sushi for Seattle diners since 1996. At her newly opened Wabi Sabi Sushi Bar and Restaurant in historic Columbia City, sushi, her favorite cuisine, is the main focus. Nguyen loves the aesthetic of sushi-​making: the art of food presentation, the clean taste and the beauty of high-​quality ingredients. She loves creating signature maki rolls like the Ceviche Roll (lime-​marinated scallops, ebi & tako, with cucumber, jalapeño, and cilantro), Japanese «tapas,» and salads. At Wabi Sabi, named after a school of Japanese design celebrating simple natural elegance, she shares her passion with you.
