Our group popped in here for drinks after dinner Saturday night. The staff were really lovely and the service was always fast. Cocktails were delicious. Fun and hip bar, food smelt amazing! Highly recommended.

This is one of my favourite bars. Not only do they have the best service, and nice cheese players. I recently discovered their mushroom cheese toasted sandwich. If you want an intimate bar, great drinks and cool bar food, give this place a go. The perfect bar to spend with friends and Eve great for dates boys.

Ok, so there was this blue flame in the glass, and when it was done, it left a trace of dark bitter caramel to infiltrate the cocktail… Smooth Proof

What is going on here? Oh yeah it’s the revival of good old fashion community drinking and customer service. The bar tends are good guys and they want you to enjoy yourself. Absolutely love this place. You should definitely visit.

Whoah calm down Adelaide! You are warming on me. Every night spot I enter and every restaurant I sit down at I am getting more and more involved in your magic. Here we have a fine bar with amazing vibe(attached to probably one of the best restaurants in Australia) where you can order toasted cheese sandwiches! We tried nearly every single version they have on offer except Mac n Cheese which they had run out of. Every single sandwhich was to die for! Come enjoy sit back and relax.

Some serious imbibing of spirits can be had here with friendly and enthusiastic service. One beer tap that is usually connected to quality local brew and we got the first beers out of a newly opened keg — best beer I’ve ever had! Good range and knowledge of whisky. Fantastic 1930s era style décor and escape to another time feeling. Slightly quirky with the bar ending in a door and the walking stick collection. Only one toilet marked«ladies» so don’t go looking for the gents. Haven’t been upstairs yet or onto the balcony so can’t comment. I was thinking that maybe some of these newish establishments like press, b&b etc are owned by the same people and after research discovered my suspicions were correct.

Only popped in for a drink but really dug the vibe of Proof. Nice chilled cocktail and wine bar — touches of class without being pretentious. Plenty of space with an upstairs/downstairs lay-out, and small upstairs outdoor area to get some fresh air or soak in summer nights in the city, drink in hand.

I’ve been to this place twice. Between visits it’s been a few weeks and I was remembered! I was offered the drink I had last time! Hands down the best staff running the place. Also, if you watch these guys craft drinks you can see the art and passion that goes into each one. This is the real deal for a sophisticated place to really enjoy your drinks. These guys will take much of my money! :) They know their stuff, their supporting staff is excellent and it’s simply a must visit. They also play chill music.

It’s been several visits since the first one(see previous review) and Proof is growing on me — service seems better and I’m lovin’ the cool vibe. It’s definitely worth a visit on a Friday and Sat night when the upstairs area is open, which is great for small groups and canoodling. When it gets warm, there is an outdoor area upstairs too. My most recent visit was a pre-dinner drink on a Wednesday, and even then, Proof had a nice ambience due to the music and lighting(and it wasn’t empty). I’m always impressed with the drinks list, there is always something there to suit the mood I’m in. I thought the price was reasonable for a city bar. It’s nice to have such a cool bar for a pre– or post-dinner drink.

I like Proof a lot but it always seems to be an in-between bar on a night out or ‘that bar just across the lane way’ when the Gallery is packed. Unfortunately the pics up on Unilocal look to give the impression that Proof is a haunted house. It definitely isn’t, but it doesn’t seem particularly well lit most of the times I’ve been. You don’t quite know what you’re going to hit when you walk up the stair case at the rear of the downstairs bar and I can’t help but feel that it’s lacking a bit of polish when you’ve walked from many of the recent openings within a 300m radius of it. That said they’ve got a well priced wine list and you’re able to grab a bottle and find a corner with ease most times I’ve been in. A welcome departure from standing in a sardine-tin like lineup then watching you don’t elbow someone in the face as you raise the drink to your mouth. Staff have always been excellent. At some point I’ll return and try the food!

The proof is in the pudding here so go along and find out for yourself… Hopefully your visit will prove to be as foolproof and fun as mine have been… Enough puns? I love this funky, tucked away bar. Exposed beams, cool interior and a large impressive bar create the first impression after being greeted by a friendly man on the door. I have been 4 or 5 times now and only once, on a quiet night, was there no man to open the door for me. I’d got kinda used to it too… so maybe BYO man if it’s a quiet night… or I suppose you could open the door yourself. I have found the service to be slick, friendly and knowledgeable. The bar staff look up as soon as one enters and provide a greeting or acknowledgement. A simple courtesy that I see missing often. Upstairs, no matter whether you are standing round in a group, sitting in the cosy chairs, or situated outside in the patio area, the staff will seek you out and provide table service. Another welcoming touch. They have simple but extremely tasty cheese toasties, with about 8 different filling options. A great pre-dinner snack if shared, especially perfect for that hour after work and before all your friends arrive to go out to dinner. As an example. Worked for me anyway. Great beverage selection with waiting staff who can offer suggestions and explain wines. They keep an eye on the water glass too and top that up — another touch that I appreciate so much. I love the feeling in here. It is warm and cosy, whilst feeling cool and special. I hope you go discover it and get your own proof!

I must admit with The Gallery being closed for renovations has left me feeling somewhat neglected for a casual bar drink along my hood in waymouth street– my prayers were answered and not long after Proof appeared! A small little doorway and you are greeted by a cosy wooden place that smells like toasted sandwiches. Not the toasted sandwiches you may at home on a using over Sunday… These were a little more special than that! To our delight they had a «toastie» menu! We’re only there for a quick drink so no food was ordered — however we were complimented with some tamari infused pumpkin seeds! They do have a short menu for you to choose some grazing items. A nice range of beverages to choose from complimented by table service from attentive yet professional staff. Ill be back and a toastie will have to make an appearance!

You best be shining your shoes before hitting this bar my friends: they have gold on the ceiling! This is one of those role play bars, where everybody pretends they have class, and personality, and loads of money. The bartenders are very smooth in waistcoats. They’ll make you up a cocktail with flash and dagger and witty conversation. Don’t expect to roll in here and throw your spare change across the counter for a beer and some salt & vinegar chips: you need to have your credit card ready. Our cocktails were worth the wait, they were rich and perfectly balanced and delicious really. But their cocktail glasses are the size of a thimble. We were pleased to discover a beer garden upstairs, it didn’t have many seats but it’s wedged in amongst a bunch of tall buildings so you can sit out there and ponder the cityscape and feel edgy and cosmopolitan. Leather couches, gold ceilings and waistcoats: new fan.

Brought to you by chef Andy Davies and the people behind Press * Food and Wine is Proof. A classic cocktail /wine bar serving sophisticated cocktails, fine spirits, quality wines & exceptional brews along with a selection of contemporary food and an upgraded take on some classic bar snacks(toasted sandwich anyone). We tried a few of the beers, a cocktail, some wines, and all good. So we had to have a snack and chose to share some of the toasted sandwiches. Speck, Onion, Mac & Cheese Jamon, Truffle and Buffalo Mozerella Beef Ragu & Fontina They tasted SOGOOD… As we were finishing up the bottle of wine, we sampled a cheese plate with some in house baked bread which was also all good.
