Specialties

1. Fundamentals of Taste and Smell ~ our beginning course about your sensory thresholds, where your preferences come from, serving and cellaring strategies, food pairing, continued learning, etc.

2. Art and Science of Fine Wine ~ what creates regional differences in wine, and how grower or winemaker decisions affect the taste of wine as reflected in all the major grape varieties.

3. Four different regional series covering all the important producing districts around the world: CA & Pacific NW; Southern Hemisphere; Euro I (Bordeaux, Burgundy, Germany & Alsace); and Euro II (Spain, Italy, Rhone, Champagne).

4. Weekenders ~ three-​session seminars (2.5 hours per session) over a Fri — Sat — Sun, designed for visitors to leave plenty of free time for sight-​seeing.

History

Begun on the Stanford campus, where classes were taught for 15 years.
