If you have no idea what fusion cuisin is, I would suggest you to come to this place; it is not strictly speaking a restaurant known for such, but somehow, the dishes here have a very strong sense of «fusion». Fusing Japanese cuisine with western style cooking. Favored by many locals, this place is always packed with people, not to mention the lines at the entrance, it might be a 10 – 15 minute wait at least before you can be seated. It is honestly quite a decent place to eat in no matter what time of the day; for brunch there are eggs and bacon, for afternoon tea, the toasts and desserts are quite appetizing, whereas for dinner, the pizzas and pastas most certainly could be your full blown meal. The reason why I would describe this place as fusion mainly is because of the way this restaurant takes classic western dishes. Pasta cabonara, both a classic and a standard dish in every western diner, Suzuki has it but topped with a soft boiled egg, not just any, but a japanese onsen tamago. The still liquid yolk meld into the sauce to give extra richess and flavor to the sauce; or a pizza topped with shrips and wasabi dressing which revolutionize your impression on ordinary pizzas. As a café, the quality of the quality of the coffee plays an important part in the making or breaking of the café; suzuki has tight control in the process of bean selection, roasting as well as brewing. With such passion and dedication, the coffee of Suzuki is rich but not astringent, aromatic but not pungent; it might very well be a perfect cup for to end a meal or to go with your afternoon tea sweets. A japanese take in classical western cuisines, thats what i call propper fusion cooking; it is innovative but at the same time reassuring and comforting.
