Executive Chef Funakoshiya was born in the seaport town of Otaru-city, Hokkaido on the Sea of Japan (north and west) side of Japan. Otaru is known for its fresh seafood and is fondly referred to as «Sushi Town» serving Otaru/Hokkaido-style sushi. Moving from Japan to the United States early in 2001 he settled in Austin, Texas with Kenichi Sushi, a hot Austin restaurant known for contemporary Asian cuisine and world-class sushi. By the end of 2001 he transferred to Kenichi in Aspen, Colorado and became the #2 Sushi Chef at this four-star sushi restaurant. In 2005, Chef Funakoshiya moved to Tucson, Arizona with his family joining a well-known Northwest-side sushi restaurant, Sushi on Oracle. He attracted a large following in four years where he became known for his skills as sushi chef while embracing both traditional and Fusion Japanese and Asian cuisine. Chef Funakoshiya joined the hot, new Bushi restaurant in January 2011.
