History

Established in 2014.

Smoke + Cedar opened March 1st 2014 at Allenmore Golf Course in Tacoma, WA. It is owned by award winning chef Gordon Naccarato and Joe Hardwick Jr, the same owners as Pacific Grill in Downtown Tacoma. The Design is directed in a more casual contemporary fashion by the same great team that designed Pacific Grill. SMOKE + CEDAR looks rich yet comfortably low-​key, like a modern mountain lodge which inspired the décor. It has interesting lighting fixtures, authentic curated American Pottery in the shelving behind the Bar, crazy-​colorful carpet to help alleviate the long gray rainy winters, and lighthearted Americana-​inspired folk-​art from local artists like the twine-​wrapped Elk antlers and a huge American flag made from mattress springs. The massive bar top was made from solid alder and has a rough-​hewn natural edge. The cedar planks that hold the menus were created out of the very cedar we cook the salmon on.

Gordon N.

Business Owner

Gordon Naccarato is a partner in Smoke + Cedar. He acts as Executive Chef and Vice President of the corporation and oversees all food operations and the hiring, training, and management of the kitchen staff. Born and raised in Tacoma, WA, Gordon moved to Los Angeles after graduating «cum laude» from the University of Washington, to attend Loyola Law School.

Gordon has a 30-​year career as an Executive Chef and restaurant owner. During his restaurant career he has worked with some of the most talented chefs across the country, in restaurants in Los Angeles, Aspen, Miami, and New York City. For many years his restaurant, GORDON’S, in Aspen, Colorado, was considered the «Best Place to eat Between the Coasts.» (NY TIMES)
