Established in 2014.

Fajita Sub Factory specializes in a fusion of Mexican and Venezuelan delicatessens.

After embarking on culinary adventures throughout Europe, the United States

and Latin America, Venezuela-​born Chef Milvia decided to park her food truck in the buzzing downtown Silver Spring, Maryland. Fajita Sub has been attracting customers ever since for the delicious simplicity and affordability of its offerings. Fresh and exotic ingredients — Ají Dulce, Olive Oil, Sea Salt, Garlic, Cumin — renders a surplus of delectable flavors. After many years preparing special Fajitas and Subs (featured her Restaurant at «100 Best Cheap Eats» by Washingtonian Magazine among others media outlets) she learned that they are among the most popular foods in the United States. She conceived a Mexican version of the Sub as well as a Venezuelan one, a Corn Sub, the now popular Arepa.

After embarking on culinary adventures throughout Europe, the United States and Latin America, Venezuela-​born Chef Milvia parked her food truck in downtown Silver Spring.

Attuned to the latest food trends and imbued in the health-​minded culture of the Metro DC area, Chef Milvia offers flavorful Vegetarian and Vegan options from ALL of her creations.

For her, inventiveness is most welcome when it is anchored in experience and cherished traditions that at once will satisfy and rekindle the longings for home or past travels.
