We have bought ¼ of an organic(for clarity, non-certified) cow for five years from Hemlock Highlands. Jean Bates is so easy to deal with, and actually will come down to Pierce County once a year to deliver orders at a prearranged location(Poodle Dog Restaurant in Fife). The beef is very high quality, and Hemlock Highlands has a cooperative agreement with Silvana Meats to do the butchering to your specifications. Here’s how it works: you tell Jean you want the beef when it is ready, it is taken to Silvana Meats, Jean gives them your phone number, they call you and you tell ‘em how you want it(how big of roasts, how much hamburger, number of steaks per package etc). If you don’t know much about meat, they’ll give you advice on different types of cuts. The meat has been consistently higher quality in terms of flavor and decreased fattiness than grocery store beef, although some portions of some cuts such as bottom round steak have been a tiny bit gristly, and really more suited more making beef stock than Swiss steak. But I don’t think that is a reflection of the quality of beef. Rather, it should be packaged differently by Silvana Meats. You can tell just by looking at it that it isn’t going to be good eating cut as a round steak, so why package it that way? Anyway, just a word to the wise should you be considering purchasing meat here. Otherwise, butchering and packaging of meat is SUPERB. I would highly recommend buying meat from Hemlock Highlands to anyone. It is good quality meat for a fair price that is hard to beat.

Jean and John, and Silvana Meats, continue to keep the total price steady; it’s been a total of $ 5.09/lb for five years now. It’s even more economical than it used to be! The beef is consistently outstanding, too, and since we’re not going to give up beef, I feel like at least we’re helping a little bit by buying grass-fed beef.
