I purchased a new, matching paring knife from Shun not long after I got my Shun chef’s knife back from Seattle Edge, and the knife Albert sharpened was actually sharper than the new, factory-​edge knife. That says it all right there.
I had an 8″ chef’s knife and small folding pocketknife sharpened for less than $ 20. Albert provides great customer service — it’s obvious he really loves what he does and it shows in his work. Highly recommended.

My wife likes sharp knives and has complained about what 14 years of family life has done to the set of Henkel 4-​star knives we received as a wedding present. For her birthday I went online and was surprised to find this business so close to home. I just picked up our 5 knives, and they look beautiful. Albert straightened one, ground a new tip on another, and repaired a bent tip on a third, then sharpened and polished the set. They look way sharper than new, all for about the cost of one new paring knife.

I have known about Seattle Edge for years but just recently became a customer.
I was on a road trip from Texas and decided to stop in to see if Albert was busy and if he could fit my knives in. My plan was to leave them with him and hit the road again to go home. I guess my timing was perfect as a slot had just opened up and he sharpened both of my Benchmade knives in less than 1 hour.
They’re not scary sharp, even sharper than they were from the factory. If you know Benchmade, you know they make very good steel.
Albert is incredibly passionate about knives and we spoke for about 15 minutes afterwards about knives, he even showed me the qualities of various knives he had in the shop and I learned a few things that day.
I will definitely use his services again but I’ll be using his mail order service next time. :-)

We had an expensive set of Tojiro Flash Japanese knives that had dull and rolled edges as well as a small chip in one blade. Albert used traditional Japanese whetstones up to 8,000 grit to restore these knives to better-​than-​new with a gleaming mirror-​finish on each blade edge. Now our knives are sharper and will hold their edge even better than when they were new! He’s a master craftsperson who takes pride in his work and sharing knowledge about knives and sharpening techniques. We recommend him without hesitation.

Albert did a fantastic job sharpening many knives that really needed attention. Cooking is a whole new happy and much safer experience.

A knife is a tool that is only as good as the edge that is on it. Personally, I am a knife person, and there are many small details that go into getting the most of a knife’s performance that mostly go unnoticed. Ok, so the fact that this is my first review after using Unilocal for over 6 years says a lot. You need to know about Seattle Edge.
I shave with a straight razor and get them honed by Albert, the owner, once a year. No one gives the same amount of attention and care into sharpening knives in Seattle as Albert does. Just go ahead and ask him what he does to your blade. He will go through each step with details that will reveal to you that he is a true artisan who is passionate about his craft.
I was close to bringing my straight razor somewhere else closer to where I lived, but once they told me their methods and saw how they handled my blade, I knew they didn’t understand as much about straight razors as Albert did. I very apologetically asked for my razor back and went straight to Seattle Edge.
Albert is also very friendly and provides excellent customer service. I always get my straight razor back faster than what the other places say they will, so that really shows you how hard he works.
Bottom line: If you have quality knives or razors you cherish, go to Seattle Edge because you can’t find anyone else in town who will care for them better than Albert will.

Amazing attention to detail and a solid human being.

Albert eventually sharpened every knife in my house, including a rusty old cleaver from the 1930s and a cheap cooks knife I bought in the Phillipines while I was in the Navy. Both came back brilliantly polished, razor sharp and useable. He had done such a brilliant job with my other knives that I gave him those two just to see if he could resucitate them, which he did.
My current kitchen knives were a bit damaged and he made them sharp enough to use for shaving, as well as providing advice for keeping them sharp.

I just brought my everyday Wustoffs because I just couldn’t get that edge back using my own water stones. Man, they are almost as sharp as my Japanese steel. He also was able to show me a few techniques to keep my Japanese steel maintained by stropping so I wouldn’t have to sharpen it as often and thus reducing the amount of steel on the knife. Thank you so much, Albert!
In addition to his expertise and craftsmanship, I also appreciated that I could bring my knifes in directly to his shop and his turn around was very fast. Some places you have to wait 1 – 2 days. I was lucky enough to be able to get my knives a few hours after I dropped them off.
If you need to bring your knives back to live, bring them to Albert. To me, he will forever be known as the «Steel Whisperer»!

The first time I took my favorite knife in (a Shun Classic chef), Albert spent a good 10 minutes doing nothing but talking passionately about the knife and what he was going to do to it and how excited he was about his work. I knew from that moment that it was in the hands of a true master.
Albert will not simply sharpen your knives, he will transform your knives into something you never thought possible. You can’t get this kind of quality anywhere else, Albert is an innovative young craftsman who is constantly updating his skills, constantly learning new things, and orients all his thoughts towards one goal: how can I give this person the best possible knife I can?
Since my first trip I’ve dropped off several old knives of various quality with dull blades nicked edges, bent tips, and some that never seemed to have an edge at all. All of them came back with a beautifully transformed beveled edge with the ability to cut through anything like warm butter and the durability to stay sharp for months.
On top of all this, Albert is a teacher. He will tell you about your knife, about the edge he puts on it, and about how to properly care for your knife so you won’t have to take it back to him anytime soon. When you walk out, you’ll not only have a razor-​sharp knife, but you’ll feel like you just got out of knife school.
I say this with all the honesty I can muster: if you live in Seattle, especially north Seattle, there is literally no reason to get your knife sharpened by anyone else. Nobody cares this much, nobody is this innovative, and nobody can get you a sharper knife for this (incredibly reasonable) price.

I’ve had various kitchen knives sharpened by over half a dozen different folks in the past decade. I’ve never been very happy with what any of them did to my stainless Henckel Four-​Stars, and so I’ve ended up upgrading and buying new, better knives over the years.
When I took my old Henckels and a cheap Victorinox to Albert, he did the unthinkable. He brought them back to life. It’s not an exaggeration to say that they were much, much sharper when he finished with them than when they were brand new, and have held their edge better than ever before. My $ 20 Victorinox cut like a $ 300 knife when he was done with it.
Because I was so happy I took in a Kershaw pocket knife I’d beaten to hell and a pair of old pre-​WWII Sabatier carbon steel knives. He worked his magic again and they are all sharper than I could have imagined.
My Takeda Gyuto is languishing on the block because all I want to use is my newly sharpened knives from Albert. He is a master at what he does, has great rates, and he’s prompt and friendly to top it off.

Took 3 of our kitchen knives in to be sharpened. Not only are the prices great, and hours/​location convenient, but Albert is one of the most cheerful proprietors I’ve met! He’s clearly knowledgeable and enthusiastic about knives (fortunately in a very upbeat way). He was quick and gave great ‘home care’ advice as well. I’m definitely bringing the rest of our knives in.

Albert sharpened my pocket knife and my kitchen knives — all came back with a mirror finish and a razor edge.
I hadn’t realized how dull those kitchen knives were until they were sharpened: no pressure needed now, they easily slice through everything. Actually — be careful with any knife Albert’s worked on, they’re sharper than you might realize and should be handled with care.
He’s a great find — someone who has a love of this work, great skill, and reasonable rates.
