Nirmal’s is the culmination of over 30 years of culinary experience of Chef Nirmal Monteiro, our five-star chef. His lifelong dream is realized in this restaurant, showcasing his talents and inspired by great traditions of Indian food, yet re-imagined with the influences of his global culinary journey.
Located in the historic Interurban building in Seattle’s Pioneer Square, Nirmal’s surroundings reflect the same mix of tradition and adventure that is a hallmark of our chef’s extraordinary creations.

History
Established in 2015.
Our unassuming Master Chef Nirmal Monteiro has quietly gone about his culinary journey over 3 decades building an enviable resume spanning the globe and mastery of diverse range of cuisines. But that’s only part of what makes him a superstar chef.
Chef Nirmal Noël Monteiro started his career in Mumbai, the most cosmopolitan city in India, where he was exposed to wide range of cuisines ranging from the traditional foods to the snacks and street food item from all over the country.
Many star chefs in India choose to train in international cuisine, but Chef Monteiro trained in the classical and traditional Indian methods of cooking and recipes. From the ancient Mughlai style to the Modern, he brings a touch of history to every dish he makes.
