We are most known for our amazing Happy Hour that is 7 days a week 2:30−6PM and an all day Happy Hour from 11:30 till close on Sun. and Mon. We were voted 2nd Best Happy Hour, King 5 for 2012 by our guests. Our Chef, Ryan Hatcher is all about fresh local prepared dishes with a New American flare from fresh seafood to dry aged Prime Sirloin Steak from Niman Ranch. Our guests say that we make an excellent burger on a local baked bun topped with bacon jam, Momma Lil’s peppers, fried shallot rings and beechers cheese. Our Dungeness Crab n‘Mac with trottole pasta in a creamy beechers cheddar-gruyère cheese sauce is very popular with our guests. From Seafood dishes to a simple traditional dish like «Spaghetti and Meatballs» Chef Ryan steps it up to adult style with Prime Steak Meatballs skewered and placed over linguini tossed in sicilian herbs and shoestring carrots with basil oil, finished with house made marinara and aged parmesan, local micro green garnish grown local in Orting, WA
History
Established in 2005.
3rd Generation, Locally Owned by Timothy J. Hall who had a plan to bring a more lifted culinary experience to the Puyallup area which at the time was lacking. Soon after he opened the doors the word spread slowly by locals and friends of the new owner. Tough times were ahead starting in 2008. Fortunately, the restaurant continued to grow as people focused their dining needs closer to home to save on the wallet. The HG stands for Hungry Goose which was the name of the prior business that was operated by his mother and owned collectively by the family. The name came from the field adjacent to the restaurant which is now apartments. It was once a feeding ground for Geese that would flock there yearly. Tim Hall bought the restaurant in 2005 and the family was no longer involved. The new owner respectfully wanted to keep the local/family history intact so the «Hungry Goose Eatery» became the“HG Bistro”. To this day though, many locals still call it «The Goose»

The Picture is of the owner Tim and his Wife Heather taken in 2005. They now have a beautiful daughter named Brooklyn. Now about the manager: Wayne comes to us with a long youthful history in the industry starting as a buss boy and progressing into a skilled server and fast forwarding to the most recent was his 4+ years managing at Asado in Tacoma, WA. after a short stint as a server at «Masa». His attention to guest service details and knowledge of wine and food make him an excellent educator not only for the guests but to the staff as well. His presence as the manager is to improve the overall service to enhance the dinning experience for the guests by continueing to educate his staff with his knowledge of service and guest relations.
