Carter & Cavero offers a unique tasting experience in an elegant space lined with stainless steel oil and vinegar containers. Customers can sample popular olive oils and vinegars and purchase them in one of our custom-etched bottles. Carter & Cavero also offers imported ceramics, olive oil spoons and bowls, gourmet foods, olive oil-based cosmetics and skin care, custom gift baskets, corporate gifts, wedding favors and more.

History

Established in 2007.

Starting with a rare offering of olive oils grown and pressed in special mills in Spain, Italy, France, Greece, Chile, Australia and California, Carter & Cavero extends the olive experience through a unique environment of olive-related products for cooking, health, home and beauty. Our first store was opened in the charming town of Red Bank. Since then we have opened stores in Pier Village in Long Branch, New Jersey, in Palmer Square in Princeton, New Jersey, in downtown Summit, New Jersey and in Sea Girt Square in Sea Girt, New Jersey. In all of our stores, we proudly offer a special olive oil tasting experience in a unique shopping environment. In elegant spaces lined with wooden shelves supporting utilitarian metal containers with spigots for dispensing a wide range of oils and vinegars, we allow the customer to explore and discover their own favorite olive oils and aged balsamic vinegars.

Raspberry balsamic is excellent for deserts with chocolate, Bree cheese & salads too! Our first time, a young man showed us the selection without being on top of us, very pleasant. We spend $ 200 easy on dishes, olive oils & balsamic vinegars. I wish I asked the name of the woman who was there our second time because she was terribly rude.

Some of the best olive oil and balsamic vinegars I’ve ever tasted. The truffle olive oil is to die for. Huge plus that you can taste pretty much anything!
The traditional balsamic is my favorite everyday vinegar. So thick, so flavorful. Yum! The basil olive oil is also a must try.
The service her was also impeccable! Asked if we found everything ok and let us know what was on sale. Also gave us recipe cards to use with our purchases.
To my fellow Italians, this is a must try in Princeton! Don’t expect bargains though, the items are definitely pricey.

This shop has some absolutely amazing flavored olive oil and vinaigrette. The products taste so good. I might have also had the best customer service I have ever received in my life from Jackie (sp?). She went out of her way to make sure the gift I was buying was great plus so much more.

My grandmother is Italian, so having a stockpile of good, quality olive oil is one of life’s necessities in my household. Thank the big guy upstairs that we found Carter & Cavero before grandma made us ship in olive oil from overseas!
This place is seriously awesome. They’ve got a ton of different styles, tastes, and vintages of olive oil, most of which you are able to taste in the store on some complementary bread!
Every mothers day I hook up grandma with a new bottle of olive oil, and some of their balsamic vinegar (mostly because the balsamic is my favorite). She never gets tired of their products so there’s never really a need to switch things up.

Nice little shop that lets you sample every oil and vinegar you buy. I did find some of the vinegars to taste better at my other favorite oil store. But the truffle olive oil is delicious here.
I rate it as a definite fun store to stop into! Ask for what bottle oil/vinegar is on sale, as that usually makes a small bottle come to $ 10.50 instead of over $ 12.

Infused/flavored balsamics and olive oils galore, with the kind of staff that you always kinda feel judging you, regardless of how outwardly personable they are. Prices weren’t at the pinnacle I’d expect, and the bread jars were plentiful and well-distributed for bountiful sampling of the more interesting and unique takes on both ‘condiments’ (not all of which were too impressive). Their web presence is strong if you’re into that kinda thing, but nothing beats walking around the joint. We left without any oils or vinegars, but did score a nice packaged fig dessert as a gift. (Likely omitting some details here due to yet another lost-draft at the hands of Unilocal Droid)

Very very adorable shop that sells olive oils and balsamic vinegars– belongs right in Palmer Square. Along the wall are gorgeous plates that look spanish or turkish. I wouldn’t buy the plates but it enriches the ambiance. All the products (oils and vinegars) are displayed with descriptions in how to use it, and what it taste like.
Also, to taste the oils, C&C offers fresh soft bread in a canister to taste the olive oils which really hits it home in the sales department. I was sold! Must have been sourdough because everything tasted good!
I bought the chipotle olive oil and definitely encourage all you try to this smoky extra virgin olive oil! The lime infused and garlic were also nice *but not unique enough for my first purchase ;-p*
Why not a 5? I didn’t get a hello when I walked in… someone was pierced over a computer. I didn’t get a «do you have certain flavors you like?» «are you looking for oils or vinegar?» nothing… not a word until I picked what oil I wanted, took it to the register and she said $ 12.95 and «thank you.» I’m sure they get customers who come in and don’t purchase anything and just want to try, but I did purchase something– and even if I hadn’t, make the patrons feel comfortable!

They have so many types of olive oil as well as balsamic vinegars. Bread is available to try each type. And its surprisingly inexpensive for the quality! The person working there seemed a little stand off-ish, but I imagine that’s so because a lot of people walk in but don’t buy anything.

This is a gem!!!
They have so many different types of olive oils and vinegars, and you can test them all straight or dip bread into them. Super nice place, friendly people working there, and lovely ceramic dishes for sale too.
We bought the Picual olive oil (very grassy!), the Tuscan Blend olive oil (fruity with a blend of spices) and the White Truffle infused olive oil (delicious and powerful).
They have a bunch of other interesting olive oils like lime infused and blood orange infused, and they had a whole slew of different vinegars like chocolate balsamic, but I didn’t have time to try those.
I would DEFINITELY recommend checking this place out, you can taste test anything and it’s such a nice thing to have around the house or to give as a gift.

After buying a few bottles of their oil and vinegar from their holiday booth at Bryant Park in Manhattan, I loved the quality so much that I decided to buy a bunch as Christmas gifts by ordering from their online site. Unfortunately, the FedEx package never made it to my apt — either it was sent to the a wrong address or someone stole it as it was (according to FedEx) left at my doorstep.
I contacted Carter & Cavero to see if they could do anything about this. Chris (the person I spoke to) was super friendly and offered to either resend the items free of charge but suggested that I pick it up at the Bryant Park booth due to the limited # of days until Christmas. He made a call to the Bryant Park booth and he said my tems will be ready for me to pick up.
They may have to eat the cost of this one lost package, but they just got themselves a loyal customer in the long run. Great job guys. This is the way to run a business, which we unfortunately do not see very often these days.

Carter and Cavero is a quaint little shop in Princeton that specializes in both balsamic vinegars and oils. When killing some time before a dinner reservation we almost walked past the place, saved by the interesting crafts used to store the oils. The store has about a dozen types of both the oil in the vinegar in a multitude of flavors. They have pieces of bread out to sample the oils and such. The blood orange oil as well as the Sicilian lemon was both really good as well as the pomegranate, blueberry and vanilla vinegars. I ended up picking up a 400ml bottle of the vinegar and a 200ml bottle of the oil. The place isn’t cheap though, I think the 2 bottle ended up costing me around $ 30 and change but for what it’s worth I think it’s money well spent.
