Dick’s Kitchen began as an attempt to create delicious diner food that takes into account the nutritional and dietary needs of owner Richard Satnick.
While researching the role that diet plays in inflammation and other metabolism-related disorders, Satnick encountered the Paleolithic Diet, a regimen based on aligning our eating habits with an understanding of the evolution of human physiological and ecological constraints.
The new field of Evolutionary Nutrition has spawned several diets and a growing awareness in the public that eating paleo or «like a caveman» (and cavewoman) could have many benefits. Some of these benefits intersect with the burgeoning vegan and gluten-free movements, diets that reduce the intake of processed foods, sugar, fat and even dairy products.
History
Established in 2012.
Owner Richard Satnick began Dick’s Kitchen as a way to share the delicious food and recipes he discovered while researching his own nutritional and dietary needs.
While studying the connections between eating habits, inflammation and other metabolism-related disorders, Satnick learned about a variety of diets, ranging from paleo to vegan to gluten-free. While Dick’s Kitchen’s menu favors a paleo diet, Satnick wants all his customers to understand that any diet that cuts down on processed food, sugars, and industrial oils creates healthier people and a healthier planet.
Dick’s Kitchen is, perhaps, the nation’s first diner to systematically and actively incorporate dietary needs into its menu by offering mouthwatering fare made from healthy, humanely raised ingredients. In fact, the servers don’t bat an eyelash when you request a special order or a modification. They encourage it because they know you want to feel good about what you eat.

Mary is the Director of Marketing of Dick’s Kitchen. She is Dick’s #1 super-fan. Mary has been eating a Paleo diet for over six months and has seen tremendous health improvements. She eats at Dick’s at least five times a week :)
