History
Established in 2014.
As of September 2015, Coco Bolos Wood-Fired Grill & Cantina features the ORIGINAL and delicious Coco Bolos menu from the renowned Manhattan, Kansas restaurant. Zagat National Award Winner Julie Haynes opened the concept with Bud and Bobby Cox over 15 years ago and it’s been a foodie favorite ever since. Coco Bolos at Prairiefire opened in May of 2014 under the direction of several chefs, but veered sharply from the original menu, disappointing its long-time fans. Beginning in the spring and summer of 2015 the ownership group re-joined forces with the Manhattan Coco Bolos to bring back the award winning dishes and cocktails that have been favorites for 15 years.
