Salinas is a unique, NY Times 2-star rated Spanish restaurant in the heart of West Chelsea. We strive to offer guests the full culinary experience of Spanish cuisine that includes both traditional and inventive tapas as well as regional main course dishes. Chef Luis Bollo, a native of San Sebastian, Basque Country, turns to traditional, rustic cooking at Salinas to introduce lesser-known dishes from the regions of the Spanish Mediterranean. His early training at 2 and 3 Michelin star rated restaurants throughout Spain as well as family recipes which have been passed down through the generations are together the inspirational backdrop of his cuisine at Salinas.
We believe Salinas to be a unique restaurant that successfully fills a void in the field of Spanish cuisine in New York City. Whether in the mood for a few tapas and inventive artisanal cocktails at our tapas bar or prefer to enjoy a full dining experiencein our dining room or garden, Salinas is the place.

Business Owner
Nicolas Matar, Mary Catherine Mikula and Donald Mikula, Salinas’ proprietors, have traveled extensively throughout Spain and were inspired by the country’s lively culture, music, and cuisine. They joined forces with renowned chef Luis Bollo (Mediterra in Princeton, NJ and Meigas in New York City), to create a menu highlighting classic dishes from the country’s Mediterranean coast.
