Guideaux’s (pronounced Guido’s) is Gianluca DiSomma. Gianluca, or Luca for short, was born in Naples, Italy. He emigrated to the US when he was seven years old, and grew up in commercial kitchens of his father, an accomplished chef and restauranteur. While Luca eventually gravitated to a life in the arts, he never forgot the lessons he learned in the kitchens of not only his father, but his mother’s at home, and the kitchens of his grandmothers before.
