History
Established in 2004.
Ruby G’s was started in 2004 by the coaching staff of Marquette University’s Girls Rugby team (the name is an anagram of «rugby») as a team clubhouse that would also give the community as a whole something it needed… a nice place to have good coffee and a decent, inexpensive meal. The team usually meets elsewhere these days, but the connection remains, and team memorabilia still adorns the walls.

Business Owner
Craig, the proud father of not one but two (now-graduated) Marquette Girls Rugby players, took over the business from its founder (Kurt) in 2006. He makes all the soups from scratch, and searches up great specials to add into the menu rotation, such as the Green Bay classic «Booya!»
