All of our mayos and vinaigrettes are made in the shop. No 5 gallon tubs of industrial white spackle here.

Dressing your Sando with one of our unique spreads such as a Basil or Spicy mayo lifts your meal out of the everyday doldrums.

For side dishes, try the SandOlab Slaw; a touch of spice with complements of Peanut and Sesame.

SandO #5 has quickly become a local favorite: Roast Turkey with bacon, smoked gouda cheese, tomato, fresh bell peppers and spinach on rustic Italian bread with Spicy mayo.

History

Established in 2009.

The term SandO derives from Marbleheadian slang for Sandwich. As a youngster living on the north shore of Massachusetts, my buddies and I would refer to that notorious mass of ingredients between two slices of bread as a «SandO.»

The «lab» represents an offer of experimentation for the guest to do so as they choose. Everyone has a favorite sandwich. Yet, my belief is that there is room for one or two more in each Sandwich lover’s repertoire.

My first job in the restaurant industry was as a dishwasher at the age of 14. The restaurant, attached to a Catholic Church, was located in South Denver. I was playing in a punk band at the time and the entire group worked in the eatery. We would blast The Subhumans, Government Issue and Minor Threat on a small tape player right next to the dish station while working our asses off. It was 1987 and I absolutely loved the experience.

As the years passed, I found myself returning to toil in kitchens and dining rooms across the country time and again. As anyone who has ever held a Restaurant gig knows, it is a Love/​Hate/​Love relationship. While briefly pursuing a career in film I would supplement my income working in the food business. Restaurants became my love. I relished the late hours, the eccentric and erratic personalities and the hard work.

From take-​out to pub to «fine» dining, I have been there and to some extent done that. Now, it is time for a Sandwich.
