Knolla’s Pizza is freedom from corporate pizza. When you walk in one of our four Knolla’s Pizza locations in Wichita, we want you to feel at home and know that you are experiencing the best pizza in Wichita. For more than 30 years, Knolla’s Pizza has been serving up the best ingredients on our one-​of-​a-​kind crusts. Whether it’s our crispy New York Style or Chicago Deep Pan crust, when we ladle on our mouth-​watering sauce, add the real cheese and fresh, generous toppings, then cook the pizza to perfection, that’s something to rave about — and our customers do just that! Unlike most corporate pizzerias, we make every pizza to order!

History

Established in 1981.

In the late 1970s, Pat and Tim Knolla decided to take their future into their own hands after careers with a large pizza corporation in Wichita KS. They decided to make pizzas fashioned after those in New York City pizzerias, where the dough is worked by hand and the owners know customers by name. The two packed up and headed for New York City to study with the best, a couple of Sicilian brothers whose pizza parlor was known to be the best. The Knolla brothers worked side-​by-​side with the Sicilians, learning the fine points of their great tasting pizza.

In 1981, the first Knolla’s Pizza opened in Orlanda, Florida. In 1988, Pat opened a location in east Wichita, KS and despite a few setbacks over the next few years, settled his pizzeria at 13^th and West Street in Wichita and has been operating there since 1995. In 2005 and 2006, Knolla brothers, Dan and Steve, opened additional locations. In 2013 a fourth Knolla’s Pizza location opened in Maize KS.
