Meet the Business Owner

Amanda S.

Business Owner

Amanda graduated from Texas Tech in August of 2011 with a degree in Arts & Sciences. She majored in English and minored in History. Throughout her college career she worked in several coffee shops including Daybreak, J&B, Healthy Essentials, Good Brews and The Bistro. She managed a staff of 13 at Daybreak on 82nd street inside Kingsgate for a little over a year. She has a great working relationship with shops currently open in Lubbock and the surrounding communities such as Evocation Coffee Roasters, Palace Coffee Company, Yellow House Coffee, and J&B.

Gatsby’s is named for her 5 year old Alaskan Malamute who is named after Jay Gatsby in the F. Scott Fitzgerald novel, The Great Gatsby. The logo, designed by the amazingly talented Jordan Watts, is a stencil-​style rendition of her dog.
