The closing hours listed represent when the last beer is served. The actual closing time is 30 minutes later. We are located at 1111 Eaton Street, Key West, FL inside the Restaurant Store/Cole’s Peace Deli (RS/CP). We are an independent business and do not operate our own tap room yet sell our beer to RS/CP for sale on premises. We brew traditional styles and our recipes are formulated to quench a tropical thirst. We do not feature a high hop character or bitterness. We feel a smooth maltiness is a better match for quaffing a cold one in a hot climate. Please rate us on the quality of our beers and not your experience with RS/CP as we have no control over staff.
Some of our offerings above may not be available at times. On the other hand, we may have a flavor not listed as we’re always testing new recipes. Nevertheless, there is always plenty on tap to please you!
History
Established in 2014.
Bone Island opened in January of 2014. Come in and ask for Jim or Ray. Jim is our brewer. He is a Certified Cicerone, BJCP Beer Judge, Siebel Institute graduate, Certified Beer Steward and the Conch Republic’s official (Beer) Ambassador to Ninkasi, the Sumarian goddess of beer! Ray is our Certified Cicerone Beer Server and will gladly pour you a pint inside the Restaurant Store or in the «Garagemahal,» our funky man-cave taproom in the rear where the beer is brewed, aged and poured. We serve our beer from grain to glass within 20 feet!

Business Owner
Jim is our brewer. He has been a local homebrewer for over 20 years and founded the Conch Republic BUBBAs (Brewers United Brewing Better Ales) local homebrew club. Jim has been a craft beer advocate since 1993 and worked to bring craft beer distribution to the Florida Keys. He was awarded the John G. Doble III Memorial Scholarship by the Florida Brewers Guild to attend the Siebel Institute in Chicago, the nation’s oldest brewing academy. Jim is also a Certified Cicerone (beer sommelier), an MBAA Certified Beer Steward and a ranked Beer Judge in the national Beer Judge Certification Program (BJCP). Sir Peter Anderson, Secretary General of the Conch Republic, appointed Jim as (Beer) Ambassador to Ninkasi (the Sumarian goddess of beer) with full diplomatic credentials. Though a tounge-in-cheek role, it is one Jim takes very seriously as a craft beer advocate within «the realm.»
