Our bakery & café is breakfast menu is available from 7:00 am (8:00am on Tues & Wed) until 11:30 am. Smoothies, juices and coffee available until 3:00 pm. Pastries sold until 9:00 pm.

We located in Coconut Grove downstairs from the popular «Jack’s Diving Locker» and across the street from the famous «Huggos restaurant».

We space with «Get Sum» pizza. PLEASE NOTE: We are 2 different businesses that work out of the same space.

Our food menu is served daily until 11:30 am. After that, the pizza guys serve slices, whole pizzas & salads.

Our Café and Bakery specializes in creating delicious vegan and gluten free meals and pastries. We make NY Bagels from scratch (hand rolled, boiled and baked). The bagels are vegan (organic flour, salt, yeast and water). We also make a gluten free bagel too!

Enjoy a bagel with cream cheese or non dairy spread. We also make delish bagel sandwiches using fresh, local and organic ingredients.

Our café also has an awesome paint your own pottery studio next door so you can create something while you sip on a latte made with award winning, 100% Kona Grown Coffee. We also sell local products for the mind, body & spirit such as Coffee & Avocado scrubs, delicious smelling ‘oli mists by Luana Farms, Hawai’ian style prayer flags, «Feel Good» cards and more.

Established in 2011.

Evolution Bakery & Café was born through our Captain Cook Location: «Up Country Bakery & Café».

Our passion and foundation remain the same:‘To offer simple, delicious, healthy food using the very best products we can.

We are a small, family run business working super hard to offer you healthier choices. It’s a labor of love (I lovingly look at my husband and daughter asleep on the couch at 8:00 pm). We hope you enjoy your visit.

Aloha!

I’m Antoinette and my husband is Johnny. I was born and raised in Taos, NM. Jon’s family is from NY but he was also raised in Taos.

I love creating spaces that are relaxing, quirky and inviting. I’m a Cancerian so making people feel good by feeding them and giving them a place to feel comfortable and safe is my passion!

Jon is my amazing husband and our baker. He really puts a lot of love into what he makes. He’s a Taurus & can work like a madman. (He was a longline fisherman in Alaska and is now vegan). He has a love for beautiful things, especially food.

Our 15 year old daughter, Luna is homeschooled and works the front of the house a few days a week. She will greet you with a smile, give you amazing customer service and make you a mean latte!
