Authentic Turkish Ice Cream or dondurma (‘freezing’ in Turkish), is a 300 year old tradition, known for its distinctly stretchy texture. This unique ice cream is achieved through a laborious technique and the use of salep flour (or ‘salepi’), ground from the root of wild orchids, indigenous to the southeastern region of Turkey.
Dondurma is traditionally made with sweetened, lactose-friendly goat milk and without cream or eggs. Mastic (or ‘mastiha,’) the rare and natural resin of the mastic tree in Greece, is also used to enhance the ice cream’s stretchy texture and provides a distinctive evergreen note. Filled with antioxidants, mastic is widely touted for numerous health benefits in natural medicine.
