Thyme in the Country

We’ve stayed at Thyme in the Country multiple times and it is our favorite place to stay in Hudson. The rooms are super quaint and comfortable — it’s an ideal space for couples. The family breakfast is reason enough for us to return to Thyme in the Country. Most of the ingredients come straight from their farm (located right next to the B&B) and it is one of the best home cooked meals we’ve had! They are open to having guests help out on the farm — You can go to the chicken coop to collect your own eggs or help milk the cows. When we visited over the summer, we spent a lot of time poolside overlooking the valley. Highly recommend this place for couples looking to get out of the city!!! We plan on returning next year in the spring.

My husband and I could not have been happier here. We spent 2 magnificent days at this delightful slice of heaven and Mary took great care of us. She graciously accommodated my gluten free needs, the room was so comfortable, the house is full of great spots to sit and read, the grounds are beautiful. I can not imagine a better spot to relax.

Five-​star + review for Mary and Bill’s Thyme in The Country. It was the perfect country getaway for these two city dwellers. The property is lovely and the farm-​to-​table food is impeccable. We appreciated Mary’s thoughtfulness, warmth and attention to every detail and were so impressed with the fresh savory offerings that we bought an assortment of heirloom tomatoes, kale, swiss chard and beets from Mary, before leaving. We made the most delicious meal with these fresh offerings when we returned home which extended our «thyme» there. We highly recommend this lovely B&B and will most definitely be going back! My family and I stayed here while attending a family wedding in June. Mary and Bill were completely gracious and lovely. Bill was nice enough to wait up a little late for us so we could check in despite that we arrived later than we said. Upon entering our rooms, we were pleased to see that they were, clean, cute, and comfortable. In the morning we were greeted by his wife mary who served some absolutely delicious breakfast made from local produce (including some from her garden). My favorite part about the experience was the charm of being on an active farm. It’s clear from the location and how mary and bill speak about their home that they care deeply about responsible and eco friendly farming and taking good care of their animals. Mary encouraged us to go check out the animals, pick eggs, and take a look at her impressive garden — very charming. The second day when my 3 year old niece arrived, Mary made sure my niece had plenty to do, opening up her home and her children’s old toys to her. They also have an adorable tree swing, chair swing, hammock, and pool — amenities we only wish we had more time to use. I recommend this bed and breakfast whole heartedly to anyone staying in the hudson area. — Mary

Our family (two adults and a toddler) booked a one night stay at Thyme in the Country via
and selected a $ 110/​night Queens Cottage option. The room description on
and
promised a room with «en-​suite bathroom». Room amenity section also includes «shower or bath», plus «a private outdoor shower», which sounds like a nice option to have.
Upon arrival, we were surprised to find that the «en-​suite bathroom» is really just a composting toilet. In order to wash hands one needs to get outside. And the «outdoor shower» is the ONLY way to get a shower, which is also about 30 yards away (attached to the main house). There was no way we could wash the toddler there. In addition, the room smells badly.
We pointed out to the owner Mary about the misleading information. She was quick to blame Priceline for having the inaccurate description (wonder who wrote these words). Given she has other rooms in the main house (but are $ 55-​$ 70 more expensive), we asked if she could help us out but giving a $ 20 discount to stay there. Her response was «I don’t see why I should.» (Great customer service!) As she pulled out her own cell phone to read w/​us the description about the outdoors shower on
, she murmured «I don’t know what that means…»
As a result, we started looking for other B&B in the area. In the meantime, we made sure to asked and she specifically promised to give us a full refund («I’ll give your money back»), which made our decision easy. .
Soon after we left the place, we were told by Priceline that Mary turned around and insisted on charging us $ 25 cancellation fee. As we called her trying to clarify the misunderstanding, she rudely refused and claimed the $ 25 charge was there all along (she never mentioned a word of it when we were there for at least 30 minutes that day)
We found her attitude throughout the entire process dishonest and unwelcoming. We travel around the country and have stayed in many B&Bs, this is far and beyond the worst B&B experience we’ve ever had from the beginning to the end! If you are thinking of trying this place out, please use caution!

Where to begin in my adulation of this B&B…
Well, first of all, the owners, Mary and Bill, were some of the loveliest people I’ve ever had the pleasure of meeting and talking with. They really made our time there a special experience and entertained us as if we were family. Also, Mary made some great suggestions for how we could spend our time in and around Columbia County.
The house itself is such a treasure. Filled with wonderful antiques, great pieces of furniture, eclectic serviceware and comfortable places to sit and relax if you choose. (Our favorite spot was by the fireplace, which they kept going whenever it was chilly.) The rooms were so clean and well kept and comfortable and welcoming. I slept better in our bed there than I have in any other bed in a long time, including my own. We had a clawfoot bathtub which I took advantage of a couple of times. What a perfect way to relax after a day of gallivanting around to different sites.
Everything that came out of Mary and Bill’s kitchen was delicious. I cannot say enough good things about the quality of the food and preparation. When we arrived, there was a fresh pear and plum upside-​down cake laid out for us to snack on, the next day a plum tart. The first morning we had a peach crisp with yogurt, then vegetable polenta, cheddar and poached eggs, and freshly baked apple challah bread. The second day, strawberry smoothies, raisin nut sourdough toast baked with cheese and tomatoes (I am definitely going to try this at home! It was incredible), gluten free waffles with whipped yogurt, apple sauce and syrup, eggs made-​to-​order, and locally made beef sausage. They really know how to please a crowd.
And speaking of a crowd, our fellow visitors were such a great bunch of people. I loved them all! We had some really wonderful breakfast conversations and were all hard-​pressed to say goodbye when it was time to leave.
There are so many other things to say about this place, I could write a novel, but I’ll just close by saying, if you are thinking of visiting Columbia County, I wouldn’t hesitate a moment to book your stay here if you can. I, for one, will definitely be returning as soon as possible!

Thyme in the Country enjoys an ideal setting among perennial beds, and organic gardens. A few belted Dutch cattle graze nearby and provide the farms’ fresh milk. It is set in acres of rolling farmland, quiet, beautiful, and serene There is a beautiful willow-​shaded pond out back. Breakfast is superb, minted tea, great coffee, fresh muesli, toast, a vegetable strudel with a farm fresh egg on top on one lovely morning. A great enclosed porch shaded by a giant maple tree is an option for summer breakfast. There is an inviting pool and a surrounding deck where you’ll want to while away the entire day. The rooms are spacious and very clean, the mattresses and linens first rate. The owners are constantly upgrading the rooms. Ours had a new private bath since our last visit. It all amounts to the nicest bed and breakfast experiences I’ve had. I’m going back as often as I’m in Columbia County. I think that if you try it, you will too.
