History
Established in 2010.
To combine their passion for Hawaii and Italian gelato, Dirk Koeppenkastrop and his wife Nicole Lueker founded IL Gelato Hawaii in 2010. As a University of Hawaii graduate with a Ph.D. in physical chemistry and a corporate food background, Dirk studied at Carpigiani Gelato University in Bologna, Italy. Later, he trained and worked with the «world champions» in Europe. His background in the natural sciences allows him to bring gelato making to a new level. Inspired by Roy Yamaguchi and Alan Wong, Dirk always wanted to fuse Hawaiian and Asian flavors with traditional Italian gelato making.
Dirk has become the Gelatomaker for the Culinary Gelato Team USA iand Team Captain and represented the United States at the Gelato World Championships in 2014 and 2016.
Meet the Business Owner
Dirk K.
Business Owner
Born in Germany, Dirk came to Hawaii as a chemistry student and surfer in 1987. After his Ph.D. at the University of Hawaii in physical chemistry he founded the lab E.L. Pacific in Honolulu.
After seven years of growing the local business and his family, Dirk and his wife returned to Germany for the education of their three children and to pursue an international corporate career. Dirk worked in general management positions in subsidiaries of US companies abroad. After working in the «high tech» environmental instrumentation business for Teledyne and in the leading edge medical equipment business for Honeywell, Dirk joined the European based Eurofins group, the world’s largest and fastest growing food testing laboratory. At Eurofins he was responsible for the environmental division for Central and Eastern Europe and South America. After acquiring several companies, merging and streamlining operations and brand development, Dirk decided that it is time to start-up his own business.
