Specializing in refined, composed Vietnamese dishes, Chef Haley Nguyen focuses on creating well-​balanced, healthy dishes with a variety of flavors to satisfy palates across cultures. Her philosophy is that Vietnamese food should be approachable to everyone, showing off the color and textures of the ingredients without compromising taste or authenticity.

For those desiring bolder flavors, the banana blossom salad, Thang Long fish and dill plate, and seared beef with water spinach are excellent choices.

For more a closer-​to-​home type of comfort food, the 5-​spice beef short ribs and cornish game hen are popular choices.

History

Established in 2008.

Xanh Bistro was designed to create an enjoyable dining atmosphere with beautiful photography, an open kitchen much unlike typical Vietnamese restaurants, and simple décor that allows the customer to focus on the food in a stylish and clean environment.

Meet the Business Owner

Chef Haley N.

Business Owner

Trained at the apron strings of her mother and grandmother, Haley

learned to cook at the tender age of 10. After immigrating to the

United States with six brothers and sisters, she obtained a Bachelor

of Science degree from Indiana University in 1984. While pursuing

other endeavors, her passion for food and cooking never subsided.

Haley owned and operated a Vietnamese restaurant named Annam

Café in Boulder; Colorado from 1993 – 1996.

Haley started her culinary teaching at the Cooking School of the Rockies in 1994. Shortly after moving to Southern California, she instigated and implemented the Asian curriculum for the Art Institute of California in Santa Monica in 1999. To complement her classroom instruction, Haley leads culinary tours to Southeast Asia, one of which was aired on a Food Network segment titled «Cooking School Stories» in March 2002.
