History
Established in 2007.
Brian Tessari laughs every time he’s asked about the early days of his restaurant, Vincent Heavenly Pies and Pasta. «It’s been said that three out of every five restaurants fail within their first three years. Opening a restaurant on the eve of a recession is something only a lunatic would do.»
But when Vincent opened in May 2007, few could have seen what was ahead for the economy. Tessari saw a need in a town with great downtown restaurants, but few impressive options closer to home.
«My goal with Vincent was to establish a neighborhood joint where folks could unwind and gather to enjoy a great meal,» says Tessari. «Other restaurants have a sort of standard tin-plate — we wanted to offer something unexpected.»
A pizza joint with a touch of swank, Vincent’s atmosphere and chef-created menu started drawing customers to west Fort Collins and Vincent’s popularity grew. Even the Denver Post took notice, calling Vincent «the kind of place you go back to.»
