Pablo’s Pizza was inspired by Pablo Picasso who forever changed the art world with his revolutionary creations. We hope for the same sort of impact on your taste buds. Once subjected to the mélange of flavors and quality ingredients, you will be forever ensnared, desperately awaiting the next meal at Pablos’s Pizza.

We are now offering gluten free dough and gluten free beer, as well as a vegan cheese that is soy free! We keep our menu fresh by offering a different pizza of the week.

Join us for happy hour 4 – 6 pm weekdays.

History

Established in 2011.

Pablo’s Pizza Fort Collins opened in July 2011 in the Front Range Village Shopping Center. Stop in after a day of shopping and enjoy one of our 25 specialty pizzas, a creation of your own, or your favorite pizza classic.

Business Owner

Cathy Braunlin opened the newest Pablo’s Pizza in July 2011. She discovered the original Pablo’s Pizza while visiting Grand Junction in 2005 and was smitten with the fun and exotic flavors. She instantly knew that Pablo’s would be a great addition to the Fort Collins dining scene and has been waiting for the right opportunity to open a franchise ever since.

Cathy has had a wide range of work experience — business/​finance, elementary education, and landscape design, but owning her own business has been her real dream. It provides her the opportunity to combine her business and people skills with her passion for great food. Being a life-​long, self-​proclaimed pizza connoisseur, she is excited to bring high quality, creative pizza to Fort Collins. Cathy graduated from the University of Illinois with a bachelor’s degree in finance and lives in Fort Collins with her 2 children, Jenny and John, and their dog, Luke.

Pablo’s pizza is our new go to veggie pizza place! We ordered the Santa Fe speciality pizza which was delicious with all the fresh toppings. We were worried that the pizza might be soggy with so many vegetables but it came out perfect. Service here was friendly and they answered all the questions we had.

Pablo’s has been on my bookmarked list for a little while, and since I was craving pizza and in the area to get my hair done, I thought, why not splurge and get some pizza while I’m at it?
They have quite an interesting list of pizza toppings with cute little names, and it took me awhile to decide which ones I wanted. I ended up going with a half chupacabra and half sweet Caroline, called in my order for pick up on a Wednesday night, and was able to pick it up with no problem. Both of the pizza types were rather tasty, the crust was good, and they still tasted good as leftovers the next couple days.
Their location in Fort Collins is rather nice, and there’s a patio area for warm days. The only downside is that it’s a little more expensive than I would normally pay for a pizza, so it’s not something I would eat often. I got a 12 inch and I think it cost me $ 17. However, it was really tasty and I’m curious to try some of the other flavors as well.

We ordered a medium roasted pepper and mushroom pizza. The problem I had with this pizza is one half of it was a toasted cracker crust and the other half was a normal crust There are much better places to go to in Fort Collins than this place. On a positive note the sauce was OK and the roasted peppers and mushrooms were tasty.

My son thinks the pizza is great, and I agree. He loves the kid’s Mac and Cheese pizza and my wife and I enjoy the Lip Snackin’ Insanity. The crust firm but not chewy and has a crisp exterior. The ingredients are unique for pizza and make for some great options.

LOVED THE PIZZA!!! Was visiting Fort Collins & found this place on Unilocal.Was great, would come back! Courteous helpful staff & creative unusual pizza combinations. Had The cheesy breadsticks, they were awesome! The red sauce & blue cheese for dipping that came with them were so good too that we took some home with the leftovers. The breadsticks are good enough To order alone without ordering pizza. My husband and I split a medium half supernova with red sauce and half Italian no Canadian bacon! We both loved our choices. It has to be really good for us to say we will come back, and we would!
Just to make people aware, it’s the type of place you order at the counter and they bring you your food. You self bus your table and refill your own drinks & tableware!

Why the average rating? The taste is average. My wife and kids prefer Domino’s (at a fraction of the price — I’m happy to oblige).
We’ve come occasionally. I’d go again.

The owner, Cathy, responded to my 1 star post from last week and took responsibility for the rude employee who gave us such horrible service on 11÷25÷15. The owner took the name of the employee and assures us she will speak to her. The owner has more than compensated us for the extra time and trouble spent that night, (we are out of their delivery area so had to drive 40 min round trip each time) to get the correct order for the child who did not get his. As a business owner myself, I commend her for doing the right thing. I, too, have had bad employees and good owners will do as Cathy is doing: whatever it takes to make it right. We were not disappointed in the pizza, just the treatment by the employee. We will enjoy using Pablo’s again.

Great pizza. Really enjoyed their slice of the day as well as the Italian Stallion! The crust is well flavored and crunchy on the bottom with a great chewy texture on the top crust. Would definitely recommend coming here to eat!

Got an Italian, Spud and a gluten free pizza (shrimp and onion). The pizza quality is high but the real treat was the gluten free crust for the gluten intolerant folks. Typically, gluten free crust is hard and the edge is not edible. They really enjoyed all of the crust. They rated it as the best gf crust they have had!

This is hands down Fort Collins’ best pizza. The wide variety of ingredients are always fresh, the crust is exquisite, and each pizza is always cooked to perfection. I would eat here everyday if I could. The atmosphere feels warm and welcoming and the outdoor patio is nice in the summer months. Their bottled and draft beer selection compliments the pizza well AND they even deliver! Thanks Pablo’s for the many meals I’ve enjoyed at your restaurant and the many more to come!

Just called to order delivery. They said we can’t because another company makes our deliveries now. I couldn’t get the directions on how to order before she hung up. Good pizza, but not at all worth poor & lazy customer service. Garlic knot is just as good & will take my delivery.

The pizza is divine! There are many well-​crafted recipes with creative ingredient pairings. I always order the Earth Momma (lemon olive oil, chicken, spinach, red onion, pineapple, goat cheese) and the flavor profile is sublime.
I bring colleagues and friends visiting from out of town to Pablo’s because I know it will be a hit. Definitely one of my top 5 restaurants in Fort Collins!

We have been to Pablo’s Pizza on several occasions. The pizza has been beyond delicious each time. Just had our first «to go» order and it was equally good. The ingredients are top quality, and the flavor combinations are spot on. Great selection of local drafts and bottled brews. Highly recommend!

Only been here once, but plan to return soon. Conveniently located in the Council Tree Center off of Harmony.
Pizza crust was spot on for my liking. And the pizzas ordered were delicious with what tasted like fresh toppings. Nice selection of beers on tap. Restaurant was clean and had an upbeat atmostphere.
I would recommend this restaurant to friends and family.

Am I missing something??? Like maybe the rest of my pizza… I like thin crust– but this is ridiculous. It looks like a Tombstone pizza. My husband ordered a large 2 topping, I ordered a medium 3 topping, a beer, and a soda $ 50. Wow!

Gluten free oh my gosh!
I’ve been searching Fort Collins for the best gluten free pizza. No one compares to this. Hot crispy goodness, at the best value you’ll get anywhere. The gf crust is flavorful, crispy, and amazing. I won’t go back to anywhere else. Service was wonderful, delivery was quick and friendly.

Hubby and I were in the mood for a new pizza experience tonight. Unilocal search revealed Pablo’s.
A steller choice, all the way around!
Was a little surprised to walk in thru the patio to get to the front door and order ‘@the counter instead of with a server’…but the prices were quite reasonable, which I’m sure keeps the costs down.
Service was top shelf and punctual.
Had the mandarin goat and regular side salad = *5*
Blue cheese dressing = *5*
Ranch dressing = *5*
Cheesey sticks = *4.5*
Pesto Raviolis = *5*
Pepperoni Pizza = *4*
Every thing tasted handmade and with fresh ingredients.
Will def be back… and with our kids… they serve a hard-​to-​find mac-​n-​cheese pizza!!!
