Description

Specialties

Amazingly authentic Chicago thin crust, deep dish and stuffed pizzas. Hand breaded buffalo wings and fresh made to order salads. We feature an extensive wine list and carry several draft and bottled beer selections. Our full bar also offers an in-house created cocktail list that emphasizes fresh ingredients, premium liquors and unusual garnishes.

History

Established in 2003.

Chicago Fire was born of my desire to enjoy the flavors and textures unique to Chicago-style pizza and share them with others.

I began researching and making pizza after moving out west from Chicago. Premium Wisconsin mozzarella, separate thin and deep dish dough recipes prepared daily, and a third generation sausage purveyor from Chicago – the same sausage maker that supplied the pizzerias that made Chicago pizza famous – are just a few of the examples of my commitment to quality and authenticity.

We are THE tribute to Chicago pizza!

–Eric Schnetz, CEO and Corporate Chef

Meet the Business Owner

Eric S.

Business Owner

Eric Schnetz grew up in the suburbs of Chicago, Illinois. He moved out to California with his family and missed the unique style of pizza that he grew up with in Chicago. After years of owning a clutch repair chain, Schnetz realized his passion for cooking and pizza had to become more than just a hobby. An entrepreneur from the start, he sold his auto repair company and opened up the first Chicago Fire in Historic Folsom in 2003. Schnetz loves coming up with new recipes and working hands on in the restaurants. Some of Schnetz’s hobbies outside of the pizza biz include walking his german shepherd, Liesel, and fixing up his original 1976 Trans Am.
