History
Established in 2004.
Chef and owner Matt McPherson has stayed true to his local New Jersey roots integrating the freshest locally grown and harvested ingredients into his unique Flemington restaurant dishes. He pays homage to a wood fired grill that «brings out the best flavors» of his dry aged Steak, 3 day Baby Back Ribs, Cedar Plank Roasted Salmon, Griggstown Marinated Chicken, and famous wood fired Romaine Heart.
The restored Victorian home provides a comfortable and elegant atmosphere. Tables downstairs feed off the warmth and energy of the bustling open kitchen. For seats close to the action, request the chef’s table where you can watch Matt and his team from a perch overlooking the restaurant grill. Upstairs is away from the bustle of the grill, while the porch provides relaxed and refreshing outdoor dining.

Business Owner
A Culinary Institute of America (Hyde Park) graduate and Hunterdon County, NJ native, Matt McPherson has stayed true to his local roots integrating the freshest locally grown and harvested ingredients into his unique dishes.
His career as a chef began in early childhood. As a junior at Hunterdon Central Regional High School, he enrolled in the acclaimed Polytech Culinary Arts Program where he began his first entrepreneurial venture: Matt’s Real Food, a catering company. Upon graduation, Mr. McPherson attended the Culinary Institute of America, where he earned a Bachelor of Science degree in restaurant management. Chef McPherson worked for several years in high profile restaurants, including the famed Sea Grill in Rockefeller Center and the Relais Chateaux resort, Little Palm Island in the Florida Keys. The former chef du cuisine at Hamilton’s Grill Room in Lambertville, he came home to open the award winning Matt’s Red Rooster Grill in 2005.
