History
Established in 2013.
Back in 1994 Russell Okubo hired Nick Dedier as a server in a small sushi restaurant in Elk Grove. nearly 20 years later they have come together as partners to open a new and completely unique restaurant in Sacramento. Russell brings years of experience from Sacramento’s Fire House, Fat Family Restaurants and a number of others. While Nick brings his experience from Las Vegas, San Francisco and Napa Valley.

Nick began cooking at a young age and after graduating from CSUS moved to Hyde Park New York to attend the Culinary Institute of America.
After graduating with distinction Nick moved to Las Vegas to begin his management career with Daniel Boulud. After nearly two years as the Restaurant Manager and Maitre D’ Nick moved to San Francisco to adopt the same role for Restaurant Gary Danko. Soon Nick was called to the Napa Valley to work for his mentor, Thomas Keller, running Bouchon and Ad Hoc for nearly 5 years.
