Where to begin? Being greeted so politely by a stranger was great, but once I gave my name, I was a stranger no more. The staff was informative and very kind. Yes, it takes a bit of a wait to get your food, but it is entirely worth it. The sandwich was superb. The sourdough bread toasted to a perfect crunch, the festival of mozzarella and cheddar cheeses converging into a veritable symphony of flavor, the pesto adding the perfect touch to the overall experience. The care with which the food is prepared is quite obvious, the owner was quick to introduce himself and shake my hand, assuring me that their ingredients are fresh and 100% organic. The fact that the menu is constantly changing is an exciting notion, what culinary wonders await the hungry tonight? If you visit one food truck in Denton, make it Shiitake Swerve. You will be immensely far from disappointed.

This is by far my favorite food truck in Denton. The Chipotle Black Bean Chili is AMAZING! I would eat it every day — great flavor, slight heat. Gourmet grilled cheeses are delux, a real treat and departure from what you normally think of. The best thing about this truck are the people — super friendly and good customer service. I wish they were open every day!

Excellent food. Yes, the rumors are true… usually takes 15+ minutes to get your food. But consider that there are only 2 employees, always a line of ppl who already ordered, and that the cooks put tons of love into each order, those few extra minutes are well worth it. As a restaurant cook myself, I appreciate the organic ingredients, inspired recipes, and authentic care the owners put into each order. I ate a Grilled Asparagus & Brie sandwich($ 8) last night. I got to watch as the chef flamed my Brie with a torch! To those complaining about the wait and price… If you want fast and cheap food, go to McDonald’s. If you want quality nutrition made by talented chefs, eat at Shiitake Swerve.

So on a coldish but beautiful sunny day I ventured over to downtown Denton. Good Morning Texas was in our fair city and food trucks were out. Downtown Denton had made a post on Facebook stating where GMT would be and that there were a few food trucks that would be serving food there. Shiitake Swerve was one of them. Shiitake Swerve is very new! Their first appearance was at the 35 Denton Music Festival about a month or so ago. I saw the truck but being that the food trucks were inside the gated area, I didn’t venture any further. Well I got an opportunity to try it today. Shiitake is a vegetarian/vegan food truck. They are based out of Denton. This is taken straight from their website: ” FOODFORTHEPEOPLE Shiitake Swerve is a gourmet vegetarian food truck that believes in food for the people. We value health and are dedicated to making it affordable for all! We NEVER use hydrogenated fats or high fructose corn sweeteners. We are also a peanut free truck for people with peanut allergies. We welcome all questions about our fare and operating concepts. Thank you for your support in creating better lives for our families and futures.“ All I can say, is that the food was great! I had an oyster mushroom poboy with slaw and a lemon aioli with a sweet potato salad. They also had a bbq mushroom sandwich, a chipotle chocolate chili pie and a coconut curry. Quinoa will be on the menu soon according to the chef who apparently has connections to UNT. I only know this because I read his chefs coat. ;) The only minor criticism I had was that the sweet potato salad needed something else. All it was, was potatoes. There needed to be a crunchy element. Carrots? Celery? Something. But being that I am not a vegetarian, this was really some special food if I ate it. Gotta broaden your horizens.
