Fins and noodles proudly serves locally produced products like Colorado Hybrid Striped Bass, Canino’ s sweet Italian sausage, 100% Colorado beef meatballs, and Colorado raised chicken. Additionally, we utilize a number of recycling programs and recycled products wherever practical.

History

Established in 2014.

Established in 2014 by local chef/​restaurateur, Robert Sansone, fins and noodles is your fast casual healthy option. Sansone, a Colorado transplant from Rochester, NY, says. «The only things I miss from the East are traditional Italian food and fresh seafood». This was the spark for fins & noodles. Our combination of «good» or «best» seafood options and the Mediterranean diet give you the option to eat smart and fast.

Chef Robert Sansone and his wife Erica still run Sansone’s Bistro a modern European Bistro just down the road at University and Orchard. They started the Bistro in 2003 and have been sharing Roberts homemade Italian specialties in a fine dining atmosphere for over 10 years. «Once my son was born in 2008 we realized there is a need for healthy, tasty, fast food for families who are looking for something smart to eat. Fins and noodles was created on that premise».

Business Owner

Growing up in Rochester, New York, Robert vividly remembers the smell of the spaghetti sauce simmering in his mother’s kitchen. «My first cooking memories are in the kitchen with my Grandmother. We were both covered from head to toe in flour», says Robert. His passion for great food inspired him to earn his culinary degree at Johnson & Wales University in Rhode Island. Since accepting a culinary apprenticeship at the Brown Palace Hotel, Sansone’s career has diversified into many directions. As a chef, he has won awards for recipes still available at Denver’s Pisco’s restaurant. As a teacher, he was a chef instructor at the Emily Griffith Opportunity School. As an entrepreneur, he has been a private chef and ran a home bistro business, and a successful Bistro, Sansone’s Bistro, for over 10 years.
