History
Established in 2009.
We started off with an ambition to cure wild Texas hams (boar & vension), which we still do just not for sale. When the economy tanked we had to go for something a little easier to startup financially.
Our first strong presence in Austin began at the SFC Farmer’s Market downtown on saturday mornings in April of 2010. The next month we began to do festivals and that would eventually become the focal point of the business; concessions.

Business Owner
Andy has spent the last 20 years in upscale dining, mostly in the back of the house. Venturing out on his own brought him back to the roots of a Texas Czech heritage he grew up with. «I think at some point every chef ends up going back to his/her roots. The simplicity of a trailer and the originality of some Czech food items all just fell into place together.»
