History
Established in 2014.
FOLD was launched in 2014 by Rachel Filer, an ex-ad agency strategist and Frederique Nguyen, Vietnam’s youngest Executive Chef, who first cut her teeth in the kitchens of Quaglino’s Mayfair, London.
Whilst living in Asia for several years, Rachel was able to discover Vietnamese food and a certain style of eating where ingredients is folded into fine sheets of rice before being dipped in a sauce. Fascinated by this discovery, she travelled the country with a food researcher, meeting with local chefs, farmers and rice paper makers to turn research and insights into a food brand for a Western market.
