Came here for a dine-out and it was very disappointing. It was a busy night but the server did not even once to our table to ask how the food was. At the end when we got the bill we told straight up that there is no tip because the food and service was really bad. Appetizer was just soso and the main dish we got were both halibut where halibut was no where to be found because it was a size of my thumb hidden underneath 1 mussel and 3 little clams. The chocolate cake I got tasted like it came from safeway bakery. We didn’t get the hotel dine-out experience. In both service & food. Plus, how can you feel hungry after a 3 course meal? Therefore, I give one star.

Ok I’m not a Dine Out fan. I wholly admit that yet I did go to a dine out last night. I’ve never been to Mosaic Bar and Grille. We got an 830 dinner time so when we got to the restaurant it was pretty much empty. I think we were the only active table they had going, so of course we got impeccable service! The food overall was ok, but I’ve had much better! I started out with the cauliflower bisque. A bit flat tasting… And too creamy for my taste. My main course was the Pork Belly over couscous. Hey I’m Chinese man! I know good pork belly! I’ve been eating pork belly since I was a little kid and this was not good pork belly! The most important part of pork belly is the top skin. The skin is suppose to be crispy and crunchy… This skin was not good at all. It was loaded with oil and soft. Even the meaty parts of the pork belly was a bit too over cooked. It was chewy not tender as its suppose to be. The couscous was pretty good. I like the buttery taste, but I did not think the bits of Brussel spouts thrown into the couscous matched. They were two competing flavours. They did not blend well together. My friend DC went to a Dine Out last year at Mosaic and he said the highlight for him was the chocolate cake. I guess I was really looking forward to it based on what DC said. I have to admit I was disappointed by the final result. I found the cake to be too hard and heavy. Certainly it was too rich for me to eat the whole thing. I could only stomach half of it. My experience at Mosaic did not live up to expectations. But I am willing to give this place another try. Maybe next time I come I won’t be doing it on a dine out!

Great buffet breakfast at a nice hotel. Didn’t stay here, but enjoyed the first meal of the day(CAD $ 28 = approx. $ 19). Buttery flapjacks, eggs, omelette chef station, etc… great stuff here! Coffee was a bit strong/bitter, but other than that, tasty buffet.

My significant other and I came here for dinner last week. The prices are high, but then again, that is to be expected for a Hyatt hotel. However the food did not taste good at all. We ordered the goat cheese soufflé to start. It was not hot and did not taste good at all. For main courses, we got pork belly and stuffed pheasant. Nothing spectacular about the food. Just overpriced, small portions that do not taste like a four star or five star restaurant. Based on the appetizer and entrees, we definitely skipped out on any desserts. When it came time to pay, I presented a Hyatt gift card. The employees acted as though they’ve never seen one before and said they had to go and find a manager. The waiter then disappeared for a good 15 minutes before coming back with the card and receipt. This was not his fault but I do blame management.

Food here is good. Very tasty except with one question is how healthy is it? My salmon with mash potatoes is super rich filled with butter. There must be a whole brick of butter in there. Salad was good. Nothing special. Lastly was the ruben upside down cake. The cake was really cold. Wish it was warm. Service not bad. The bun was cold but the butter did bring out the flavor. I have something against cold bun but I am ok with it. I have had their food many time. Will come back

Mosaic is on the second floor of the Hyatt Regency on Burrard St. in Vancouver. On a recent two-night stay at the hotel, we came here twice because their calamari was out of this world! When a lady who appeared to be one of the managers here told us we should try it because it was the best calamari she’s ever tried, I thought she was just being completely biased. But it just might be the best calamari I have ever had myself! I was really surprised. The batter was so freaking delicious and just the perfect thickness, the squid was so fresh, the bell pepper slices and cilantro gave it all an extra zing, and the sweet and tangy dipping sauce was money! I might have to drive back to Vancouver just for this, and I’m salivating right now just thinking about it. The duck confit poutine was a dream. Ugh, if weight gain wasn’t a phenomenon, I wouldn’t have stopped eating this all weekend. Thick-cut fries, wonderfully rich gravy, and a generous topping of house-cured duck confit. I loved the servers and the bartenders. We had a great time chatting with them about city life. They also poured some great drinks! Okay, I didn’t actually do any drinking here, but I did order an iced Americano, which was beautifully prepared by a male bartender! It was the fanciest iced Americano I’ve ever seen, maraschino cherries and all, and the espresso they serve here is some of the best I’ve had yet.(Okay, I just Googled it, and apparently, Torrefazione Italia used to be a coffee roaster, but it’s now a high-end Starbucks brand. The family who started it also started Caffè Umbria, which I love! Welp, good to know. I had no idea what I was drinking was a Starbucks brand espresso.) Service was quick, too. No complaints whatsoever! You definitely shouldn’t miss Mosaic if you’re staying at the Hyatt.

We had the chance to try both the buffet breakfast and the dinner at the mosaic during our stay in the Hyatt regency. Dinner was just excellent and we don’t understand why there weren’t that many people dinning there. Loved the ahi tuna and the sockeyed salmon. Well worth the price.

Table of three only for a pit stop The greatest thing of this place was Heidi, our superb waitress. Kind, charming, efficient. Well done Heidi, I really wish more staff members were like you! FIVESTARTSFORHEIDI The coffees were fairly good and so were the desserts The three stars are only because this is inside the Hyatt that is a very mediocre place with corporate nothingness flavor. To compare we went to the Fairmont; now that’s a place with a much better overall experience. And guess what: even a bit less expensive!

Plenty of fresh breakfast options. I came here to use my breakfast package from the Hyatt Reagency hotel. The buffet options are excellent. Raw salmon, sockey, cottage cheese, and the omlette were my fav. The pancakes were very thin. Service was quick and optimal.

Don’t have high expectations for hotel restaurants, and not this one especially after reviewing a confusing online menu(half orders of entrees?). Everything changed as soon as the herb and sundried tomato scones arrived… followed by the fois gras… and the risotto. Everything was delicious and portions were huge. I get the half order option now. Do wish they had more options on their appetizer menu but overall was a great experience. Service was also fantastic.

You got to come here if you are in the downtown area. I know it is a hotel restaurant but it is still pretty good. We were staying at the Hyatt so we decided to come here for dinner. The restaurant has a pretty nice view of skyscrapers. I was super hungry and ordered the prime rib sandwich. It came out pretty fast and it was super tasty and juicy. I think the aged provolone cheese really made it taste good. I don’t usually like provolone cheese but it was fantastic. My husband ordered the lobster pasta. They basically throw an entire lobster tail into that dish. Although it comes in a small skillet looking plate, it is so rich and heavy that you can easily feel full after eating half of the dish. The Hyatt breakfast buffet is pretty good too. Make sure you check in on Unilocal because they give you a buy one get one free coupon. :)

3.5 Stars? I’ve only been to Mosaic twice but both experiences were quite different. The first time I dined here was during their first VanEats coupon period, where you got a ton of food for only $ 22(I believe there was another $ 28 coupon a few months after?) This was really good value and we were really really stuffed. I would have given this experience 4⁄5 since I enjoyed the food but it wasn’t spectacular. I remember the smoked salmon was very impressive because it came on a plate with a glass dome filled with smoke and when served, the waiter removed the dome and the salmon would magically appear!(I didn’t explain it very well but it was cool) Also, the first time I went was really good because they served mini scones with butter rather than the free regular bread that restaurants typically serve. These were delicious! Anyways, the most recent experience were was a bit of a disappointment. I would probably give 3 stars, hence the 3.5 average at the top. Their«mini scones» have changed and they aren’t as good anymore. The entrée portions are also a lot smaller now(referring to my photo) and it’s quite an empty restaurant even at 7pm on a Saturday night! The scallops that I ordered were pretty good but there wasn’t but subsistence in the dish… I actually really wanted to order their famous chocolate cake but I had too many sweets that day so I restrained myself from doing so. Anyways, Mosaic is decently priced and the service is good but you don’t seem to get much value for your money but at least the dishes are quite tasty and kind-of unique?

Mosaic Bar & Grille in Hyatt Regency Vancouver, we really enjoyed the brunch there. It has a nice open area and side windows to look out downtown scene. During holiday season, they have a lot ginger bread castles displayed in lobby. It stopped us for awhile to check it out. We started with good coffee and checked out the lunch menu. We almost wanted to order everything on menu. Seafood chowder — It’s so creamy and rich. Delicious! Tuna & Green salad — So refresh and light, just absolutely matched w/my chowder. BLT — The burger just perfect and garlic fries were so tasty. Crab Benedict — Fresh crab meat and perfect poached egg with amazing hollandaise sauce. Corn beef sandwiches — Fresh and thick roast beef sandwiches Overall, It totally exceeded our expectations, probably this is «so-called» hotel standard.

Once again I headed back to the Hyatt to try out Chef Heinrich’s new fall menu for Mosaic Grille & Bar. Their menu changes every season, with drastically different dishes that change per the ingredients each season as well. We started off the evening with the beautiful fall salad($ 10) consisting of baby carrots, beets, tokyo turnips, fennel, and pumpkin. This was definitely very pretty and the beets and carrots were quite refreshing with the tangerine dressing. The roasted chestnut bisque($ 9) was really good, rich, and creamy — perfect for a crisp fall day. I was surprised at how rich it was despite it not actually being made of seafood. The apples were a nice touch as well, adding a little bit of crunch and texture to the soup. The butter poached Alaskan crab($ 14) was quite good as well. Can’t complain if it’s swimming in delicious garlic butter and if the shells already cut open for easy access. The mushrooms were also a nice touch, I thought. The roasted beets with toasted pumpernickel, pine nuts, and salt spring island garlic goat cheese($ 13) was interesting. To create this marshmallow-y beet, it was first frozen prior to roasting, leaving a slightly foamy and fluffy texture. I’m not huge on beets, and this was a bit different. I didn’t hate it. After the appetizers, we moved onto the entrees, including the hand-cut pasta with sake steamed mussels, tomatoes, miso beurre blanc($ 15). At first it seemed like the pasta was a bit undercooked, but actually it was just a bit dry. After coating it with more sauce it was better, but still a bit harder than al-dente. The mussels accompanying it were good though, and I liked the sauce. The ling cod with butter poached lobster pomme purée($ 18) was pretty good, with a slight crispiness on the outside and a soft inside. One of my favourite dishes that evening was the sous vide lamb with broccoli rabe, butternut squash, and spiced walnuts($ 24) cooked perfectly at medium rare, resulting in tender and moist lamb. Sous vide has always been a fascination of mine actually. The power of science! The seared Baja Ocean Wise scallops($ 20) were also quite good and a favourite. It was an interesting pair with the proscuitto and fig, which balanced the different tastebuds on one’s tongue. The scallops themselves were seared perfectly. The famous Mosaic chocolate cake with layers of cake and fudge, was as always rich and delicious. A bit too sweet for those lacking a sweet-tooth, but nonetheless a delight. The pumpkin crème brûlée was alright; I personally was not a huge fan of it, but my mother enjoyed it. I didn’t like the custard being as thick as it was due to the incorporation of pumpkin purée, but flavour-wise it was bang on with the fall flavour spices. Overall it was a very enjoyable meal at the Hyatt with good company and good food. The fall menu is definitely worth checking out with a wide variety of meat and seats as well as fresh fall vegetables to tie everything together.

Atmosphere? Check, despite the location which is within a hotel. Great waiters/waitresses? Oui, oui! They were wonderful! I used a VanEats package here, and apparently I should’ve told them before we sat down, because the menu is different for that. But man oh man, let me tell you. A la Minute Smoked Skuna Bay Salmon was the best thing I’ve ever eaten. The moment the lid comes up and all the smoke flees into the room, you’re welcomed with a beautiful fillet of salmon, glistening in beauty and all goodness beyond space, surrounded by fresh greens and delectable wasabi and lemon sauces. I was amazed by how smoky this fish was, and how great it was complimented by the greens and the sauces. This dish still haunts my dreams. Then I had the Sous Vide Lamb, which was the most tender pieces of lamb I’ve ever had. Medium rare, of course, but the crust was just simply divine. The veggies were delicious, and I was blown away by the quality and presentation of the so far dishes. How could it get better, right? Mosaic Bar did not fail to deliver the«better». It was dessert next, and I had Pumpkin and Nutmeg Crème Brulee. First of all, you have truly not lived until you have had their Pumpkin and Nutmeg Crème Brulee. Second of all, you have DEFINITELYNOT lived until you have had their Crème Brulee. IT’S THATGOOD! Not too sweet, but not too blend. My palate is quite sensitive to sweet, and honestly, this was definitely the BEST dessert I’ve ever had. I love Crème Brulee, but Pumpkin CB!!! I am craving for more. I’d go back there, just for dessert, because it was just THAT good. I’ll be back. Mosaic Bar, expect to serve 20 Pumpkin and Nutmeg Crème Brulee.
