Meet the Manager

Chef Erwin Palo P.

Manager

Erwin Palo hails from Angeles City in the Philippines. He graduated in Culinary Arts and Technical Management at the Center for Culinary Arts Manila and further went onto study at Emilita W. Galang Culinary Arts Studio. Erwin has studied under some of the world’s top chefs and undertaken stints in Philippines, Hong Kong and Japan.

In Canada, Erwin has worked at the Westin Nova Scotian and the Marriott Harbourfront Hotel, Casino Nova Scotia. Currently, he works as the Executive Chef at Café 101 in the Holiday Inn Harbourview.

Erwin was Awarded Atlantic Canada’s Chef of the Year at the Atlantic Canada Food Service Awards and former team member of NS Culinary Team. In 2012 he achieved Gold at the NS Chefs Challenge and represented NS at the National Chefs Challenge. In 2011, he achieved Gold at the Atlantic Provinces Culinary Salon competition in 2010; Erwin was awarded Gold at the P.E.I. International Shellfish Challenge. Prior to that, Erwin had won a total of 38 medals.
