«Roy Oh, a second-generation Korean-Canadian who grew up in Edmonton, knows his bul-go-gi from his bi-bim-bap (his mom was a good cook and raised him in the culinary traditions of Korea). But although a passion for Korean food led him to the restaurant world, he didn’t want to recreate the familiar food of his parents’ homeland. He wanted to update it by adding ingredients like pine nuts, crème fraîche and avocado, to reinvent it by combining Korean spices with local organic meats and greens.»
