Chef, Tim Vatsaklis uses only the best Sydney produce in his menu, with a philosophy that allows the produce to speak for itself — raw flavours, simply yet deftly prepared and respectfully handled.

History
Established in 2012.
All our food is prepared, cooked and served fresh, which enables our chefs to cater for a variety of tastes and dietary requirements. Our menus are developed around seasonal, fresh produce. Local growers and suppliers are used as often as possible with a significant portion of our lettuce, vegetables, herbs and oils sourced locally.
At Seed Cuisine, all our meat products are grain fed and are chemical and antibiotic free, our seafood is fresh and is ordered daily — we purchase only the best seafood that is farmed in Australia. Coffee is a passion and we have teamed with Danes coffee to bring our diners the best in coffee.

Chef, Tim Vatsaklis, has strong memories of eating at Perama in Petersham as a child, now he owns the restaurant. The sous chef, at The Cook’s Garden in Turramurra, which landed a 15⁄20 review in the 2012 SMH Good Food Guide, will open Seed at the vacant Perama site next month. «It’ll be modern Australian with a Mediterranean influence,» Vatsaklis says.
There will be a smattering of Greek dishes for the Perama faithful — grilled haloumi with slow-roasted vine tomato, spanakopita and slow-braised lamb shank with mint yoghurt are on Vatsaklis’s draft menu.
The restaurant’s former owner and chef, David Tsirekas will work alongside Vatsaklis for three pop-up dinners at Seed, later this year.
