Established in 1975.

Freedom Bakery & Confections is a 2nd generation family owned business and have been in operation for over 35 years! The bakery was originally opened on Freedom Blvd. and relocated to the current location on Hangar Way. The word «Confections» was added to the name in 2007 when we added a whole line of chocolate confection treats.

great tasting but left me hanging for my son’s first birthday just two days before his actual birthday party. had people coming from all around too. i had called a month in advance and they said everything would be ready and that i could pay the day i came to pick it up. thankfully i had decided to go pay two days before. they had advertised a certain cake and i asked them if they could do it and they said yes. went in to pay for it and they told me i needed to bring in the decorations myself for the cake. at no point in time did they let me know that prior to my going in. you’d think that they’d mention that or have called me wondering when i’d be bringing in the pieces. nope! never happened. thankfully Wal-​Mart came through for me last minute and actually did a great job! the only reason i’m even giving them two stars is because their quality. but buyer beware! make sure this doesn’t happen to you. make sure they understand and ask if there is anything they are going to require from you other than the money. i’ll never try to order any special occasion anything from them again! very disappointed. had been going there for years and years

We purchased our wedding cake and matching, mini cupcakes from Freedom Bakery after tasting many options (too many options) at other bakeries. Freedom Bakery had the most delicious cake and frosting/​filling options BY FAR, and they were incredibly professional. Paul delivered exactly what we wanted, exactly as we’d discussed — a happy and necessary thing when managing a complicated and large wedding! Plus, the final product tasted and looked divine. I would whole-​heartedly recommend Paul and Freedom Bakery.

I have only great things to say about Freedom bakery. I ordered 3 dozen cupcakes for a High School sports event but had a problem with one dozen of them. I called the bakery and they immediately offered to make me a new dozen and DELIVER them to me. Even when they went to the wrong high school, the woman still managed to get them to us in plenty of time. That kind of customer service and concern for a customers satisfaction is rare. It was amazing and I can’t thank them enough. I’ll definitely be ordering out Awards night cake from them! And the cupcakes were excellent!

We used them for our wedding cake and they were great! Paul walked us through the tasting where every flavor was more delicious then the next. It was so difficult to choose only two flavors! The final design of the cake on our wedding night was gorgeous! Thank you Paul!

Freedom Bakery did our wedding cake, an ice cream groom’s cake, and a beautiful dessert bar at Gardener Ranch. Paul was so easy to work with. He really listened to what we wanted, which was not yet that specific, and offered great suggestions to make our ideas into exactly what we wanted and within budget. Everything turned out beautifully (and delicious) and we received many compliments from our guests. I even managed to eat two pieces of our wedding cake, and my husband LOVED his special groom’s cake! We could not have been happier with Freedom Bakery and would recommend them hands down.

I’ve been getting cakes from Freedom Bakery since I was a kid. They have never disappointed. Yet again I needed a special cake for a special dinner for some volunteer ministers. The cake was more than I could’ve hoped for. It was beautiful and delicious. So many compliments from everybody. I drive from out of town to get my cakes and it’s worth every mile. We did our tasting about 5 months prior to our wedding. At first we were turned off by the outcome, given the individual who did the tasting; as well as the limitations we were given with coloring and flavors. I emailed Paul (the owner) and expressed my discontent, who then immediately reviewed the entire cake/​cupcake order. He assured me my color choices and pairing flavors was something he could do. He also re-​evaluated the sizing for the top cake, as the initial estimated size was too small for our cupcake tower (for no extra charge). I emailed Paul a picture of my cupcake tower, to assist him with his color matching for the top cake and cupcakes and… check out my seahorse cake /​cupcake pic, AMAZING!!!
We chose Chocolate Ganache (chocolate brown frosting) and White Pistachio flavored cupcakes (teal colored frosting). We had approximately 150 cupcakes, all of which were delivered, set up and matched my color scheme perfectly. Many people raved about the Chocolate Ganache cupcakes too!!! We had a Monterey Perry House Wedding, if you are looking for an awesome intimate venue. Freedom Bakery is one of their preferred vendors and I would recommend coordinating with Paul for your tasting and design ideas — He is a P.R.O!!!

We ordered our wedding cake through Freedom Bakery for our wedding at Mission Ranch. From the cake tasting with Paul to when we cut our cake on our wedding cake we were highly impressed. The cake was moist and delicious and people were talking about it the next day. This bakery is the gem of Watsonville. It has quality flavor and has been around forever. My mom can remember this bakery from the 70’s.
Their selection of cake flavors are classic and delicious. Their Monterey cake is my absolute favorite-​chocolate ganache is amazing.
Carrot cake is the best I’ve ever had– and their eclairs!
No other eclairs compare to the cream-​filled delights they create. This is the best bakery with local flavors, and amazing touch.

I am kind of a last minute person and that just doens’t fly when you’re planning a wedding. When I was unsure/​undecided on details, Nina kept me on track and made very helpful suggestions and is also a great listener! Our venue was a private residence with a barn reception– so I wanted to keep the design simple yet elegant. The cake added to the décor and ambiance of the room. It was hard to decide a flavor because all of the samples taste so good. My husband and I agreed upon the lemon and raspberry cake. Not only were we super happy with the way our wedding cake turned out, many of our guests said it was the best wedding cake they’ve tasted! Thank you Freedom Bakery!

I don’t know why you’d go with any other baker in the Monterey Peninsula. Freedom Bakery is THE BEST. They made a gorgeous three-​tier buttercream, black/​white with raspberry and amaretto mousse for my Carmel Valley wedding in September 2015. Not only was the cake the phenomenal, but the service and overall experience working with this company was stellar. Paul hosted a very educational and fun tasting session for us (we tried about 12 different cakes), and since we had an outdoor wedding, Paul worked with our wedding venue to ensure the cake was properly taken care of and protected from the heat and sun. It was refreshing to work with a company that truly understands customer service, especially in the wedding business. Throughout this entire wedding planning process, working with Freedom Bakery and the cake itself was a REAL treat! ;)

I was in Gilroy for business this past week with my GF and it just so happened that her birthday was this week too. I wanted to bake her one but traveling and baking don’t really work hand in hand. So I found this gem of a bakery. The place is a little hard to find but their product makes up for that. I got her the lemon mousse cake with raspberry preserves; it was phenomenal! The cake was fluffy and the lemon and raspberry together are a match made in heaven! Thank you for making her day special!

We ordered our wedding cake from Freedom Bakery. I sent them a picture that I found on Pinterest and they were able to make it look exactly like it. We ordered the Red Velvet and it was the most delicious cake EVER!!! Calories don’t count on your wedding day, so I had two slices lol. Communication was strictly through email and the ordering process was easy and simple. The cake was delivered to our restaurant on time and the cake was perfect! I would definitely recommend Freedom Bakery!

I used Freedom Bakery & Confections for my wedding last year and Paul and the bakery were amazing. When I submitted a request for more information Paul got back to me right away and was so friendly. He was so accommodating to our schedule which was jam packed because we were only in Monterey for a day. When we showed up for the tasting Paul had all of the cakes ready, and there were quite a few, and he explained what was in each one and too notes when we said which ones we liked.
My husband and I already knew the design we wanted which we found on their website. What we didn’t know was the topper had been provided by the bride and groom. Before I could have a panic attack Paul assured us that he could create the exact toppers we wanted. I knew when we left the bakery our cake was in good hands. And the price was very reasonable. It was actually less than we thought it would be and Paul actually saved us money by steering us in the right direction. He didn’t try to sell us anything we didn’t need.
I never actually saw Paul the day of the wedding but our cake was amazing. We got so many compliments on not only how pretty and original it was but how good it tasted.
I cannot stress enough how amazing Paul and his bakery were. I would highly recommend them for any events and I wish we lived closer so that we could enjoy more of their amazing cakes.
