History
Established in 2012.
From 1946 to 1996 the owner of the Arcade Billiard Parlor and Sandwich Shop (on the National Register of Historic Places) in Hickory, NC and prepared his own smoked, pit-cooked, chopped pork barbeque from a pit next to his house.
After his death, one of his employees took over the business and recipe for his barbeque and vinegar-based sauce, and it’s made the same way today.

Jean Jacques D.
Business Owner
Jean Jacques is a local business man who fell in love with the chopped barbecue and purchased the business from Carl.
Carl hails from Hickory, NC, where chopped pork barbecue is THE barbecue of the area. Graduating from North Carolina State, a Federal government job took him around the country to almost every National Park. He experienced barbecue from so many regions of the country, landed in Washington, DC, and introduced his co-workers to chopped pork barbecue.
Many restaurants and stands claimed NC style barbecue, but it never matched that hometown taste from his childhood. So he and his partner, Jacob, ready to leave the banking world, decided to bring those hometown tastes to the streets of DC.
