History

Established in 2014.

Newly remodeled and under new ownership and management, Wainscott Main Wine & Spirits is run by owner Joel Kaye, and GM and sommelier Chimene Macnaughton. Chimene has over twenty vintages experience tasting, buying, and selling wine in fine-​dining restaurants and retail from San Francisco to the Hamptons.

Manager

Chimene Macnaughton is certified by the American Sommelier Association and loves grower-​producer Champagne. She flips for French rosé and is passionate about the world-​class fruit coming out of the Walla Walla Valley.

Chimene hails from California originally, so she cut her teeth on the cult reds of the Napa Valley when they were still just «date wines» in San Fran.

Chimene Macnaughton has lived year-​round on the East End since Summer 2005. She began her wine studies working in the top fine-​dining destinations of San Francisco: Boulevard, Postrio, Hawthorne Lane. Chimene has built wine lists for restaurants here in the Hamptons as well as for a Relais et Chateaux property in Sun Valley, Idaho.

She has worked for many years as a private chef to local East Hampton families, as well as in stints at the best local restaurants: Della Femina, Fresno and The 1770 House.
