Sichuan food is famous for many different flavors, and the most popular ones are hot pepper & pepper corn. This is because many flavorings and seasonings are produced in Sichuan (Szechuan) Province. Sichuan Province has high humidity and many rainy days. Hot pepper helps reduce internal dampness, so hot pepper was used frequently in dishes, and hot dishes became the norm in Sichuan (Szechuan) cuisine. (Chongqing used to be part of Sichuan Province).

I was born and raised in Chongqing which is now a major city in Southwest China and one of the four direct-controlled municipalities. In 1989, I attended one of the top culinary schools in Chongqing, China. I have worked at Four season hotel in Wuhan before coming to USA, 16 years ago. For the past 10 years, I have been working as Sushi chef in restaurants in Columbus, Cincinnati & Dayton Ohio. I am very thrilled to bring both cuisines I love the most together~Szechuan style Chinese dishes & Sushi.
