Why have my knives hand sharpened compared to other sharpening service methods?

Grinding wheels, belt sanders, electric sharpeners, honing steels, and pull through sharpeners are all common methods used to renew an edge. These methods may be cheap and fast, but they drastically reduce the lifespan of your blade by removing excessive amounts of material. Honing steels and pull through sharpeners rarely achieve the desired results. Allowing grinders to sharpen your knives can cause irreversible damage. By heating the metal the individual de-​tempers the blade altering hardness properties of its steel. This means it becomes softer and loses its ability to hold an edge like the manufacturer intended. Sharpen your knife a dozen times, and you’ve lost a good half-​centimeter of width, throwing it of balance, and rendering any blade with a bolster useless.

What are we doing different?

We understand the importance of a sharp knife and the dangers of working with a dull one. We also value your investment. We don’t just throw your knife in a machine and watch the sparks fly. Pride through craftsmanship is applied to all knives in our care. They will be delicately guided through the traditional Japanese whetstone sharpening process and given the most precise edge. Your knives will be returned to you better than new, with a mirror like finish, precise edge, and minimal material removed. This kind of care will ensure the investment you made into your knives will last a lifetime.

Justin Gillaspie, Owner

Justin and his three year old daughter Paisley are new members of the Los Angeles community as of December, 2012. Prior to his new home in Sherman Oaks, he resided in San Diego. He there honorably served in the United States Marine Corps for six years and completed several combat tours to both Iraq and Afghanistan. Post military, he pursed studies in Mathematics and Aeronautics which led him to his current position in the aerospace industry verifying integration and structural design conformity.

For Justin, sharpening is part of his home Appalachian culture. One that he has practiced for over 10 years. Born and raised in the mountains of West Virginia, he has an absolute passion for blade honing. As his first small business begins, his one desire is to support local businesses above all else. Blade quality is the bare minimum of what is to be delivered. For Justin this is and will always be about exceeding customer expectations.
