Bellwether Hard Cider and Bellwether Wine Cellars produce fine, artisanal hard ciders and single-vineyard wines. Our hard ciders are made with locally grown American and European cider apples. Our Rieslings and Pinot Noir are made with grapes grown in a variety of Finger Lakes sites, and show the distinct characteristics, or terroir, of each site.
History
Established in 1999.
Bellwether Hard Cider was founded in 1999 by Bill and Cheryl Barton. We make ciders that we like to drink! Our ciders range from very dry to semi-sweet, pair well with a wide range of foods or are lovely on their own. We use fruit from our own expanding orchard of heirloom varieties and work closely with local apple growers to complete our flavor palette. We are thrilled to be leaders in the rediscovery of this traditional American drink.
Bellwether Wine Cellars began when our daughter married a winemaker whose commitment to excellence matched our own. Kris and Caitlin Matthewson make wines that express the terroir of the Finger Lakes sites on which the grapes for their Pinot Noir and Riesling wines are grown. Kris makes a range of Rieslings, including a Wild-Fermented and a Petillant-Naturel, in addition to his superb Pinot Noir.
