Taz’s Indian Cooking Classes focus on traditional Indian recipes, ingredients, and cooking techniques in a comfortable and relaxed atmosphere. Throughout the classes we discuss the diversity of India and it’s cuisine along with the health benefits (Ayurvedic) of individual herbs, spices, and ingredients in order to build a larger appreciation for India’s incredible cuisine and to help Aspiring Chefs prepare and eat healthier meals.
History
Established in 2007.
The Dhaba Cooking School was started in 2007 at the India Plaza in Tempe by the owner Raveen Aurora and Chef Palavi Lal as a way to share the diversity of India and its cuisine all while teaching Aspiring Chefs how to prepare one of the most loved yet misunderstood cuisines in the world. Chef Taz Doolittle joined the program in 2008 as an assistant to Chef Lal helping with classes, creating lesson plans, and writing recipes. Beginning in late 2012, Chef Taz Doolittle took the reigns and has been acting as the sole Culinary Director for The Dhaba Cooking School expanding the program and its offerings.
In 2015, Chef Taz Doolittle began Taz Cooks Culinary Instruction as a way to expand his teaching opportunities outside of The Dhaba. While still focusing on tradition, Taz Cooks classes can showcase any of the world’s cuisines giving opportunity for Chef Taz to share other recipes, techniques, and cultural diversity.

Chef Taz Doolittle has been cooking both professionally and for personal
satisfaction throughout his life.
He has traveled the world to learn dishes, techniques, and culinary traditions from the source including nearly three years in India cooking for a number of restaurants throughout the subcontinent and learning from home cooks wherever possible in order to learn traditional Indian recipes and cooking techniques.
