History

Established in 2006.

In June of 1983 Cindy Pawlcyn forever changed the wine country restaurant scene when she fired up the stoves at a roadside restaurant just north of Yountville and established herself as the haute comfort food maven. In nearby St. Helena her even more personal Cindy’s Backstreet Kitchen is another magnet for locals.

With the September 2006 opening of Go Fish, she’s fulfilling her long-​held dream of opening a classic West coast fish restaurant complete with a San Francisco-​inspired raw bar. To satisfy our hankering for Pacific Rim flavors, she even persuaded Tokyo-​trained sushi master Ken Tominaga to give the restaurant a full sushi and sake bar.

One look at the menu assures Cindy’s enthusiastic following that whether it’s all fish, no fish or vegetarian fare they’re hungering for, everyone will be well fed at Go Fish. From the start, this native Minnesotan created dining rooms where winery workers in their «wellies» mingled with guests dolled up for a night on the town.

Cindy’s path to the wine country began in her mother’s kitchen. She continued on to La Varenne, the Cordon Bleu and to the University of Wisconsin where she earned a degree in restaurant management.

«I never really wanted to do anything else,» she now says.

Her first mentor was Rich Mellman who hired her at Chicago’s renowned Pump Room and continues to check in with her regularly. She was the opening chef at Meadowood in St. Helena and joined Bruce le Favour at the memorable Rose and le Favour before launching the landmark Mustards Grill.

Cindy is an inductee of Who’s Who of Cooking in America and has been twice nominated for the James Beard Foundation award for Best Chef in California. She is the recipient of the Robert Mondavi Award for Culinary Excellence and the Fine Beverage and Food Federations Career Achievement Awards. She has authored three cookbooks. Her Mustards Grill Cookbook received the James Beard Award.
