History
Established in 2001.
H2O is the third Bohlsen Restaurant to operate on this property in Smithtown. In 1976, John Bohlsen built an Arby’s fast-food location here and operated it for seven years. It was in 1976 that the iconic birch trees were planted in front of the restaurant.
In 1989, as John Bohlsen shifted his business to casual dining, the building was transferred into the Beachtree Café of Smithtown. As the Beachtree, it operated for sixteen years.
In 2001, on the heels of the successful opening of Tellers in Islip, the restaurant was renovated into H2O Seafood Grill Sushi Bar.

Business Owner
The Bohlsen family began in the restaurant business in 1931 with a little coffee shop in the Red Hook section of Brooklyn. Herman Bohlsen, his wife Hilda, and his brother Gerhardt, ran the shop until 1938.
John Bohlsen, son of Herman, bought his first fast food restaurant in Deer Park in 1969 after earning his Master’s Degree in Business and serving as an officer in the US Navy during the Vietnam era for four years. He remained in the fast food business until 1983 when he sold his 50-plus restaurants.
In 1987 John purchased the Beachtree Café and from 1999 to the present proceeded to design and construct four restaurants along with his two sons, Michael and Kurt, for the next generation of restaurants in the «Bohlsen Restaurant Group” — Tellers An American Chophouse, H2O: Seafood & Sushi, Prime: An American Kitchen and Bar, Verace: True Italian and their latest addition, Monsoon: Steak & Sushi.
