We are a gluten-​free and vegan bakery and café.

The Flying Apron utilizes a DEDICATED gluten-​free and vegan facility — no gluten or animal products are introduced at any time, therefore, there’s no risk of cross-​contamination of potential allergens found in wheat, dairy or eggs.

We offer an amazing variety of house-​made sweet and savory goods, in addition to offering fresh squeezed juice blends, gluten-​free beer and wine, custom cakes and breads in addition to pizza, salsa, pesto and whatever else sounds good on a given day.

Our retail locations in Fremont and Redmond, WA offer locals a variety of delicious treats including cupcakes, muffins, cookies, brownies, cakes, tarts and custom cakes for design and delivery to your special occasion. We offer savory items too: lasagna, soups, salads, sandwiches, pizza and a full line of breads. We’re regularly testing and re-​engineering our recipes to create new and tasty treats as well.

History

Established in 2002.

The Flying Apron began its journey in the University District of Seattle in 2002, moving to the Fremont neighborhood of Seattle in 2007. We purchased the Flying Apron in 2009, taking over operations in January, 2010.

We acquired a small retail location employing 9 people. In mid-​2010 we began wholesaling to local coffee shops, restaurants and specialty markets in an effort to spread gluten-​free and vegan goodness across the greater Seattle area. We moved east to Redmond in May, 2011, with a retail café near Redmond Town Center. Today (2014) we employ 30 people and wholesale to over 150 different locations across the Puget Sound.

Inspired daily by our customers, we strive to provide and and often feel our products are superior in taste, texture and quality to those offered in the wheat-​dependent world we live in today.

We firmly believe at the Flying Apron, that it’s not about what you can’t eat! We’re paving the way for gluten-​free and vegan goodies that everyone craves!

Owner/​Operators

The dynamic duo of a four-​partner-​owned operation (Partners: Erik Chelstad and Ethan Hernandez), Jeff and Angela manage the day-​to-​day operations of the Flying Apron. Jeff manages behind the scenes, Angela works on culture, hiring and new product development with bakers, changes and improvement. As a team they monitor the entire operation, vegan soup to gluten-​free nuts.

In their spare time, Jeff is the drummer in a local band, Hobosexual, and Angela is a practitioner and instructor-​in-​training for a Korean martial art, Tang Soo Do. Their two children are well-​versed in the café environment, their daughter often things she’s the ‘manager’ their son is regularly seen during nap time in a stroller wheeled around the Fremont café.
