Although I prefer to hand sharpen a knife, I do offer different knife sharpening edge options to suit the customers needs. These guys take knife sharping seriously. From the first contact I was was walked through the process of what it would take to fix a large chip in a very expensive knife. I emailed photos and they gave me an accurate quote and honest opinion on how the repair would affect the appearance and shape. Shipping the knife was easy and the turn around was very quick. The knife came back like new. I was very pleased. I wish every business were run this professionally.

Dan did an amazing job. I couldn’t be happier. I will NEVER go anywhere else.
My knife is insanely sharp and he turned it very quickly. I’ve dealt with other
sharpening services in the past and they tend to leave tiny scratches near
the edge. Not the case here. The knife is completely scratch free. I only
wish I would have known about Maloon’s before.

As Dan no longer services my area in person, I mailed him an assortment of knives for both hand and machine sharpening. All came back like razors. but the edge he put on my Shun
is amazing! I have been in and around professional kitchens (and knife services) for 25+ years and I am afraid to use this Shun. the sharpest knife I have ever seen! I just wish I could have observed his technique and learned a thing or two.
Don’t waste your time with Farmers Market grinders who will turn your knife into a stub that will be dull in a week! Maloons/​Elite Edge is the real deal! You will not be disappointed!

Dan is the guy for your knives without a doubt. I made an appointment for sharpening and he was there right on time. I gathered up a few friend’s knives as well to make it more worthwhile and ended up regretting it. Dan did a wonderful job, I got the knives back and then scratched my friend’s highly polished blade with a sponge. Called Dan back on the case and he went out of his way to polish out the knife. Really out of his way. Totally above and beyond the call of duty. Also his pricing is beyond competitive.

Excellent service was planning on paying for 2 premium packages done but Dan offered me he’d do 2 for the price of 1. Dan came to my place and picked up the blades and came back 2 hours later, blades were razor sharp and was shaving hair of my dog like a hot knife thru butter, I plan on getting more of my blades sharpened in the future

Dan completed two premium edges and two hand sharpenings in much less than an hour. I only paid $ 8 for one of the premium sharpenings (normally $ 30) because I think he cares more about his craft than charging you full price. Now the mirrored edge of my newly sharpened knives is hard at work. Thanks, Dan!

After missing the knife sharpener at Hida Tools several times, I found Elite Edges.
Pros:
1. He comes to you!
2. More than fair pricing. $ 3 for machine sharpening. Hilda’s charged $ 7 for machine.
3. Offers hand sharpening. Standard and premium.
Cons:
1. Not really a con. Due to traffic he might not come right on time, but that’s not his fault. He threw in a premium sharpening since I waited. Again he’s coming to me so not a big deal.

Dan came over today and picked up three knives: a Benchmade folder, a fixed blade ESEE, and my 10″ Global chef’s knife. An hour later he returned with them, all amazingly sharp; i can shave the hair off my arms with any of them. I paid $ 20 for a little extra attention to my chef’s knife. The money was well worth it. I don’t think my knife has ever been this sharp. Did I mention he came to me? At no extra charge?
Without a doubt, Dan has been the best sharpening service I have used. He was friendly and professional. I will never go anywhere else to get my blade sharpened.

Maloon’s Knife Sharpening, aka EliteEdges, is the best knife sharpening service I’ve ever encountered. Dan came to our home, picked up our knives, and returned one hour later with some very, very sharp knives.
This is not your fun of mill sharpening where the knife is put in a mechanical machine. Dan will hand sharpen your knives, treat each one as unique, and afterwards show you how to take care of those knives. Pricing is very reasonable.
Dan impressed me with his knowledge of knives, the metal used in various knives, and how to sharpen and take of knives.
Dan is a nice guy, our dog instantly loved him. If you live in the East Bay, and need some knives sharpened, I highly recommend Maloon’s Knife Sharpening service. And if you do not live nearby, Dan offers mail-​in service.

You forget what a pleasure it is to use a properly sharpened knife until you have yours sharpened by someone who knows what they’re doing! My brother told me about Dan’s service and given the sorry state of every edged item in my home, I packed up every knife and scissor in the place and hauled them to Dan for sharpening.
Fast service, EXTREMELY sharp edges, he gets extra points for properly sharpening my serrated knives, which have suffered more than one botched job in the past. The one warning I have is, treat your knives carefully when using after sharpening. You need a lot less pressure because the knives are now doing the work, so treat them with respect or you’ll likely cut yourself when using them until you re-​learn how to cut with a sharp edge. The litmus test for me was: can I cut a tomato with a straight edge instead of a serrated? PASS!
So if you need knives sharpened, Dan is the man.

A craftsman is worthy of his hire, and Dan Maloon is a craftsman.
I came across Dan here on Unilocal!and I have to say that Dan did a fantastic job for us! He was quick, available and I met him at a local Peet’s, handed over our collection, and within hours, had them back in my hands and ready for action.
Dan clearly loves what he does, does it extremely well, is on time, prompt, and even provided us two «sample» blades with his high end surgical finish so we could test out the difference between his usual work and the polished edge.
All of the blades are razor sharp and we couldn’t be happier with the service and the pricing. He did a great job and handled our cerated knives as well.
Definitely don’t hesitate to give him a try – I’ve already sent my sister to him with her collection and several pairs of sheers as well.
